XABREAKFAST FROM AROUND THE WORLD 🌍
Welcome to my new series, where I’ll be showing you everything about the world of breakfast. This is part 2 and today we’re taking a trip to the Caribbean island of Trinidad and Tobago 🇹🇹, to make a classic dish, called Doubles. An iconic Trini street food dish, which involves curried chickpeas over fried bread, served with sauces & chutneys. A real treat, I’ve put the full recipe below !
Start by making the curried chickpeas, by placing the soaked chickpeas in a pot of 4 cups of cold water. Bring to a rigourous boil for 10 minutes, scooping off any scum that rises to the top. Then cover and simmer on a low heat for 45 minutes.
Make the dough by combining all the ingredients except the water and mix very well. Now slowly add the water, mixing as you go, until you form a dough. Start to knead for 5-10 minutes, then shape into a circle, drizzle with oil, cover and allow to rest for 1 hour.
10 minutes before the chickpeas are cooked, heat up a frying pan on a medium heat. Add the ghee, then followed by the cumin & coriander seeds. Bloom for 30 seconds, then add the minced garlic, ginger & chilli. Cook for 1 minute, then add the whole spices and bloom for a further minute. Now add the green seasoning and cook for a few minutes, then add to the chickpea pot and allow to cook for a further 15-20 minutes. Mash 1/4 of the peas to help thicken the curry.
Now shape the dough into 8 equal sized balls, then let proof for a further 15 minutes. Now spread the dough into flat circles, add to hot oil and fry for 20s-30s until lightly puffy and cooked through. Now serve altogether.

Ingredients
* Bara
360g spelt flour
1tbsp sugar
1/2tsp turmeric
1tbsp yeast
1/2tsp salt
250ml warm water
Enough oil to shallow fry
* Channa
2 tins chickpeas
1tbsp green seasoning
1tsp turmeric
1tsp geera (cumin)
200ml water
Pinch of salt
A little chadon beni (sub - coriander) to finish
* Roasted pepper sauce
3 roasted scotch bonnets
Juice from 1 lime
1/2tsp salt
* Chadon beni sauce
Small bunch of chadon beni (sub - coriander)
50ml water
1/2tsp salt
1tbsp sugar
* Mango chutney
1 large mango
200ml water
2tbsp sugar
1/2tsp geera (cumin)
1/2tsp turmeric
1tsp amchar masala
1 clove of garlic, grated
1/2tsp chilli (optional)
1/2tsp salt
* Grated cucumber
Method
To the flour add the sugar, salt, yeast, turmeric &mix. Slowly add the water until you have a soft dough then form into a ball (no kneading required). Add some oil to the top of the dough &cover the bowl. Allow to rise in a warm place for 30 mins - 1 hour.
Add the drained chickpeas into a saucepan then add the water, turmeric, cumin, salt &green seasoning. Mix then cook on medium heat with the lid off until the liquid has reduced slightly. Finish with some coriander.
Once your bara dough has doubled in size. Knead back together &remove from the bowl. Oil your hands ÷ the dough into 10-12 balls. Heat the oil in a pan. While the oil is heating, on an oiled surface flatten the dough balls into your desired thickness. Place one bara at a time carefully away from yourself into the hot oil. Fry for 10-15 secs on each size then remove &place into a bowl lined with kitchen towel. Repeat until all of the bara are cooked.
* Mango chutney
To a saucepan add the fresh mango, water, cumin, turmeric, amchar masala, salt, garlic &chilli. Cook on high for 10-15 until the liquid has reduced by half.
* Chadon beni sauce
To a blender add a small bunch of coriander, water, sugar &salt then blend.
* Pepper sauce
Fire roast some scotch bonnet chillies, by placing under the grill or carefully over a gas hob cooker. Once charred add to a blender with the salt &lime juice.
