Authentic Jamaican Easter Bun (Moist & Flavorful)

Dry:
• 2 cups all-purpose flour
• 1 cup brown sugar
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon
• 1 tsp nutmeg
• ½ tsp mixed spice (optional but authentic)
• ¼ tsp salt
Wet:
• 1 cup stout (Dragon Stout or Guinness) 🍺
• ½ cup milk option (see below 👇🏾)
• 2 tbsp honey
• 2 tbsp molasses
• 1 tsp vanilla extract
• 2 tbsp melted butter
Fruits & Extras:
• 1 cup raisins (soaked in stout or warm water)
• ¼ cup mixed peel (optional but traditional)
• 2 tbsp browning (for that rich dark color)

Choose ONE:
• Evaporated milk (BEST for richness)
• Whole milk (simple and still good)

1. Prep First
• Preheat oven to 350 F
• Grease and line a loaf pan
• Soak raisins (10–15 mins for softness)

In a large bowl:
• Flour, sugar, spices, salt, baking powder, baking soda
Mix well.

In another bowl:
• Stout
• Milk (your choice)
• Honey

Whisk until smooth.
