Ingredients (Cups — Eggless Chocolate Sponge (foolproof, easy to scale & beginner friendly recipe) 📌🍫🍰 SAVE & SHARE with your friends & family 🫶🏽 Ingredients (Cups & Grams) Flour - 1/2 Cup + 2 Tbsps/ 100g Castor Sugar - 6 Tbsps/ 90g Cocoa Pwd - 2 Tbsps/ 10g Baking Soda - 1/4th Tsp Baking Powder - 1/2 Tsp Salt - 1/4th Tsp Oil - 1/4th Cup/ 60g Curd - 2 Tbsps/ 30g Vanilla - 1/2 Tsp/ 3g Coffee Pwd - 1 Tsp/ 1.5g Vinegar - 1/2 Tbsp/ 7.5g Hot Water - 1/2 Cup + 2 Tbsps/ 150g Process 📝 * Start by sifting the flour, baking pwd, baking soda, salt & cocoa powder in a separate bowl - whisk once sifted & keep aside for later * To prepare the batter, in a large mixing bowl, whisk together castor sugar, neutral oil & vanilla essence along with some curd * Add in the coffee powder along with some hot water & mix it in * Add in the sifted dry ingredients into the wet mix in batches - mix the batter only until its smooth & lump-free * Finally add in the vinegar & fold in it gently * Transfer the batter to a greased & lined 5 inch cake tin - tap the tin twice to release any air bubbles * Now bake in a pre-heated 160C oven for 40-45 mins/ until a skewer comes out clean * Allow the cake to cool down slightly, before running a knife around the tin to release the cake * Flip the cake upside down & de-mould it carefully - place on a wired rack until the cake cools down completely * This sponge recipe is perfect for layering cakes & desserts & it works well for bulk batches as well * To store it for longer - surface cling wrap the cake & freeze it for upto 15 days, thaw overnight in the fridge before slicing & layering it into favourite cakes & desserts! 🫶🏽 P.S.
