ITDumb Dinners, Episode: 21 — Marry Me Chicken Orzo (Dumbed Down)
If you’ve ever stared at your kitchen at 5 PM and thought, I don’t want to do this, hi, welcome, this is for you. One dish, no stovetop - all you have to do is dump it, bake it, and you’re done. Easy dinners like this are the reason this series exists.
What you need:
1.5–2 lbs boneless skinless chicken thighs (whole)
1 cup dry orzo
2 ¾ cups chicken broth
3 cloves pre-minced garlic
½ cup sun-dried tomatoes in oil, lightly drained
1 tsp garlic powder
1 tsp paprika
1 tsp dried oregano
½ tsp salt + more for chicken
Black pepper
6 oz cream cheese, cubed
1–2 handfuls fresh spinach (optional)
Optional: small squeeze of lemon
How to make it:
Preheat oven to 375°F
In a greased 9x13 dish, add orzo, broth, garlic, sun-dried tomatoes, and all seasonings. Stir. Let sit 5 min.
Nestle chicken thighs on top. Season with salt and pepper.
Scatter cream cheese cubes around the dish. Don’t stir.
Cover tightly with foil. Bake 25 min.
Remove foil, stir orzo around chicken, cover again.
Bake another 15–20 min until chicken hits 165°F.
Rest covered 5 min.
Stir everything together until cream cheese melts into a sauce. Add spinach, let wilt 1–2 min.
