Wowww these chocolate eclairs! They’ve got the looks, the texture, the flavour…the works! I made that lovely eclair dough last month but never filled it with anything so I thought it was time to do a chocolate eclair recipe. They are filled with a chocolate creme pat, and topped with a shiny chocolate glaze, and a chocolate crumble. I did so well at getting a smooth glaze and then at the last second blasted a ton of air bubbles into it, so not quiteeee as perfect as I would’ve liked 👀 But the crumble covers up all mistakes! Soğuyunca 4 adet yumurtayı teker teker ekleyip her seferinde mikserle çırpın. Çırpma işlemi çok önemli güzelce yumurtaların hamura özleşmesi gerekiyor çok çırptığınız da daha güzel bir hamur oluyor. Sıkma torbasına hamuru alıp videodaki gibi yağlı kağıt serili tepsiye aralıklı şekilde sıkın. 200 derece sıcak fırında 15-20 dk (kızarana kadar) pişirin daha sonra 150 dereceye düşürün 20, 25 dk pişirin. Hamur güzel pembeleşmiş ve içine geçmeyen bir yapıda olmalı. (Hamurun sönmemesi için fırın kapağını pişene kadar açmayın. Güzelce pembeleştikten sonra ayarı düşürüp birazda kuruması için pişirmeye devam edin.) Kreması İÇİN; 3 su bardağı süt 3yumurta sarısı 2 paket vanilya 1 çay bardağı şeker (tatlı seviyorsanız bir kaç kaşık daha ekleyin) 3 yemek kaşığı un 3 yemek kaşığı nişasta Hepsini sürekli karıştırarak pişirin. Fokurdayınca kenara alın. Başka bir kaseye alıp üzerine buzdolabı poşeti serin(kabuk olmasın diye) Krema soğuyunca 3 yemek kaşığı kremşanti (toz olarak) ve 100 ml(yarım paket) krema ekleyip mikserle istenilen kıvama gelene dek çırpın. Kremayı ekler hamurlarının içine sıkın üzerini erimiş çikolataya bulayın. (Yaklaşık 150 gr çikolata kullandım sütlü bitter karıştırıp erittim.) Con craquelin croccante e una farcitura golosa di crema pasticcera al pistacchio e panna fresca. Semplici da gestire, scenografici da servire, provali✨ 📝Èclair craquelin al pistacchio Ingredienti (per 30 pezzi 9cm di lunghezza) Per la pasta bignè: -150gr acqua -100gr latte -5gr zucchero semolato -100gr burro (freddo di frigo) -150gr farina 00 -2gr sale -200gr uova (circa 4 uova medie) Per il craquelin: -80gr burro (morbido) -90gr farina 00 -90gr zucchero di canna Per la crema pasticcera al pistacchio: -500gr latte intero -150gr zucchero -6 tuorli di uova medie -60gr amido di mais -80gr pasta di pistacchio -semi di 1 bacca di vaniglia Per la finitura: -250gr panna fresca -25gr zucchero a velo -pistacchi interi -fiori eduli di fiordaliso Procedimento Step 1: prepara i bignè. In una pentola versa il latte, l’acqua, il burro, il sale e lo zucchero; porta sul fuoco e, quando arriva a bollore, unisci la farina in un solo colpo e mescola. Continua a cuocere per due minuti. Poni il composto a raffreddare in planetaria con il gancio foglia, oppure a mano allargalo con una spatola. Unisci le uova, uno per volta, continuando a mescolare. L’impasto dovrà risultare liscio ed omogeneo. Ponilo in una sac à poche, con puntata a stella francese media e forma sopra un tappetino un silicone (o in alternativa carta forno) tante strisce, poni in congelatore. Step 2: prepara il craquelin. Mescola il burro morbido con il resto degli ingredienti (farina e zucchero di canna). Stendi l’impasto tra due fogli in silicone o di carta forno, ottenendo uno spessore di 3mm e poni in congelatore fino al momento dell’utilizzo. Quando la pasta bignè sarà congelata, ricava i tuoi éclair lunghi 9cm aiutandoti con un righello ed un coltello. Una volta pronto, riprendi il craquelin, e ricava delle strisce 10x2 cm e poni sopra ogni éclair. Cuoci in forno preriscaldato a 190° statico per 10 minuti, poi riduci a 180° statico e prosegui la cottura per altri 15 minuti e fai raffreddare.
