DSFEUILLETINE or FEUILLANTINE
That irresistible crunch? It’s feuilletine.
Delicate shards of caramelised crepes that add buttery crispness to every bite. It’s one of my favorite ingredients.
Recipe:
40g Softened Butter
40g Icing Sugar
40g Egg Whites at room temperature
40g Flour
Method:
- Whisk in the icing sugar with the softened butter.
- Once incorporated, add the egg whites and whisk
- Add the flour in three additions and mix until you have a homogeneous mixture.
- Spread it on a silicone mat and bake at 150 deg C for 10 mins or until golden brown
