Go with 18 g in and 36 g out for a smooth 1:2 ratio.
Focus on milk texture.
About 4 oz of milk. Less than a latte, more than a cortado.
Keep the steam wand near the surface, then drop it early to limit air.
Steam to 140°F or 60°C for soft, velvety microfoam.
