Yo — Home-milling benefits⬇️ Home-milling flour gives you even more control over your food. You can control the kind of grains you use in your kitchen. You can control WHAT goes into your flour (and ultimately your body too.) Due to the ultra-processing and bleaching of most flours stuff the store, these flours are usually nutritionally depleted. Once flour is milled, the nutrient content begins to degrade especially if the flour is exposed to oxygen. The high processing temperatures degrade the vitamins, minerals, and antioxidants found in the grains. Because of this, synthetic vitamins like folic acid are added back in….which I do not want to consume. Home-milling flour is exciting because of how many different grains there are! Here, I am using einkorn grain, but I also have others in my food storage. Did I mention grains can be stored long term in Mylar bags with oxygen absorbers?! I store mine in 5 gallon buckets with gamma lids. Not surprisingly, you can taste the difference of freshly-milled grain vs the stuff that’s been sitting on the shelf and is ultra-processed. I love food, so quality matters to me. Learning about WHAT goes into your food is crucial. Like folic acid being added in……….are the grains being sprayed?? All things to wonder! And every small action you make to take control over your food, you bring power back to yourself! Also, it’s handy to have a manual grain mill in your emergency supplies in case the power goes out and you need to break out the food storage! What do you think? #homesteading #homesteadlife

Commercially milled flour removes 30% of the wheat kernel, inadvertently removing the most nutritious part of the grain to make a fluffy white flour. This is why cereals and breads at the store have a nutrition labels that boast “fortified with iron, thiamine, etc…” They took out the natural nutrients and replaced it with man-made dupes. Whole-grain wheat contains the entire grain kernel, including the bran, germ and endosperm. The bran is the hard covering that surrounds the germ and endosperm. The germ is the embryonic seed that contains unsaturated oils. The endosperm is the largest part of the kernel, which is mostly starch. The bran and the germ are NOT found in processed white flour from the store. Freshly milled flour gives baked goods greater depth of flavor, creamier texture, more body and better flavor. When I ordered my grain mill, I also ordered several pounds of kamut (aka khorasan), einkorn and hard white wheat. Each of these wheat varieties brings some thing unique to my recipes! Hard white wheat is versatile and can be used for anything from cinnamon rolls and fresh bread to sourdough. Einkorn and Kamut are ancient grains that contain fewer chromosomes.
