**Kanafi Recipe**
**Ingredients:**
* 1.5 packages of kanafi (600 grams)
* 1 cup of ghee
* 2 cups of ricotta cheese
*(1/2 pound of @karoundairies sweet cheese)
**Simple Syrup:**
* 2 cup of sugar
* 1/2 cup of water
* lemon 🍋
**Instructions:**
1. **Prepare the Ricotta Cheese Mixture:**
* In a large bowl, combine the cut-kutaifi dough with ghee gently. Press and incorporate the ghee into the dough.
* Using a 10 to 12-inch round pan, smear ghee all over the surface. Spread half of the dough along the edges of the pan and press firmly to ensure no cheese is visible. This step is crucial to prevent gaps that can allow the cheese to burn. Once evenly coated and pressed, add the cheese. Do not be excessive with the cheese; you may have some leftover. Spread the cheese evenly in the center of the pan, keeping it away from the edges. Finally, add the remaining dough, covering the cheese and pressing down. Utilizing a wax paper and a flat tray can be helpful in achieving this.
* Bake in the oven at 325°F for approximately one hour. Alternatively, you can pre-make the kanafi and store it in the refrigerator or freeze it for future use.
2. **Make the Simple Syrup:**
* In a small saucepan, combine 2 cup of sugar and 1/2 cup of water.
* Heat the mixture over medium heat, stirring frequently until the sugar dissolves completely.
* Once dissolved, add a squeeze of lemon juice and remove from heat. As it cools, the simple syrup will thicken.
3. **Combine and Serve:**
* Drizzle the simple syrup immediately after the kanafi is finished. Reserve some syrup for those who prefer extra sweetness.
* Garnish with pistachios and serve.
