One-Pot Vegetable Skillet Lasagna// This recipe has been getting a lot of love on the other app so I had to reshare! A delicious vegetarian meal option, even your meatless skeptics will enjoy! Change up the sautéed veggies using whatever you might have on hand and make it easy by using your favorite jarred marinara sauce. Love making this in a skillet, too - takes the fuss out of making a whole lasagna. #recipe 2 tbsp extra-virgin olive oil 2 carrots, finely chopped 1 red bell pepper, chopped 1 medium zucchini, chopped 1 yellow onion, chopped 5 oz baby spinach, chopped 8 oz bow tie pasta (I use gluten-free) 2 cups vegetable broth 2 cups marinara 2/3 cup cottage cheese (whip in a food processor or blender for several seconds to get a smooth consistency) 1 cup mozzarella cheese, shredded Salt, to taste In a large skillet, over medium heat, add olive oil. Add the chopped carrots, bell pepper, zucchini, yellow onion, and 1/2 tsp salt. Cook, stirring every couple of minutes, until the veggies are golden a bit softened, about 10 minutes. Add spinach, marinara, veggie broth , and pasta, and stir until well combined. Bring to a boil, cover and simmer for 10 minutes or until pasta is tender. Remove from heat and stir in whipped cottage cheese, and sprinkle mozzarella cheese over top. Cover for 1-2 minutes or until cheese is melted. EASY MEATLESS MEAL IDEA ⬇️ this sweet potato red lentil curry is a go-to in our house and my kids love it. So quick, packed with protein and fiber, and makes great leftovers for the next day! WHAT YOU NEED: • 2 tablespoons olive oil • 1/2 white onion , diced • 1 tablespoon grated ginger • 1 tablespoon grated garlic (about 3 cloves) • 1 teaspoon curry powder • 2 tablespoons tomato paste • 2 tablespoons red curry paste (I like this one) • 4 cups cubed sweet potato (2 medium) • 3/4 cup red lentils • 1 (14.5 oz) can lite coconut milk (or full fat) • 1 1/2 cups vegetable broth (or water) comment “CURRY” for a link to the full recipe!

Makes for a delicious lasagna too! 💛 #recipe 2 tbsp extra-virgin olive oil 3 carrots, chopped 1 red bell pepper, chopped 1 medium zucchini, chopped 1 yellow onion, chopped 5 oz baby spinach 24 jumbo shell pasta, cooked very Al-dente (will finish cooking in oven) 2 cups cottage cheese 1 cup mozzarella, shredded 2 cups marinara (@raoshomemade) Salt, to taste Parsley, chopped (optional) In a large skillet, over medium heat, add olive oil. Add the chopped carrots, bell pepper, zucchini, yellow onion, and 1/4 tsp salt. Cook, stirring every couple of minutes, until the veggies are golden a bit softened, about 10 minutes. Add spinach. Cook until the spinach has wilted. Remove from the heat and set aside. Pour half of the cottage cheese (1 cup) into a food processor and blend until smooth, then transfer to a large mixing bowl. Add the cooked veggie mixture to the food processor. Pulse until they are more finely chopped (but not puréed!). Transfer to the bowl of whipped cottage cheese. Top with the remaining cottage cheese, then add 1/4 tsp salt ground black pepper. Stir to combine. In a 9”x13” baking dish, spread 1 cup of marinara in an even layer in the bottom of the pan. Fill each cooked shell with the veggie-cheese mixture and place in the baking dish. Spoon the remaining marinara over shells, then sprinkle with mozzarella. Cover dish with foil and bake at 375F for 20 minutes. Then uncover and bake for an additional 10 minutes or until cheese is melted. Sprinkle with parsley & serve. #stuffedshells #vegetarian #healthyrecipes #highprotein

Light yet comforting—perfect for family dinners or meal prep. 📝 Ingredients (Serves 6–8) Vegetables 1 large eggplant, thinly sliced 2 zucchini, thinly sliced 1 yellow bell pepper, sliced 1 red bell pepper, sliced 2–3 tbsp olive oil Salt & black pepper, to taste Sauce & Cheese 2½ cups marinara or crushed tomatoes 1½ cups ricotta cheese (or cottage cheese, blended) 1½ cups shredded mozzarella ½ cup grated Parmesan 2 cloves garlic, minced 1 tsp dried oregano 1 tsp dried basil Optional: chili flakes Layers 9–12 lasagna sheets (regular or no-boil) Fresh basil or parsley, for garnish 👩‍🍳 Instructions Roast the vegetables Preheat oven to 200°C / 400°F. Toss eggplant, zucchini, and peppers with olive oil, salt, and pepper. Roast 20–25 minutes until tender and lightly golden. Prepare the cheese layer In a bowl, mix ricotta, garlic, oregano, basil, a pinch of salt, and pepper. Assemble the lasagna Spread a thin layer of marinara in a greased baking dish. Add lasagna sheets. Layer roasted vegetables, ricotta mixture, marinara, mozzarella, and Parmesan. Repeat layers, finishing with sauce, mozzarella, and Parmesan on top. Bake Cover with foil and bake at 190°C / 375°F for 30 minutes. Uncover and bake 10–15 minutes more until bubbly and golden. Rest & serve Let rest 10 minutes before slicing.
