But sometimes it can be a struggle to get them that way, so here are some reasons why your cookies may be going flat- Make sure you’re following me @tismtreats for all the baking tips! ✨1. Your cookies may have too much butter or sugar to flour. If your cookies always come out flat pancakes, try reducing the sugar, and slightly increasing the flour! ✨2. Your baking soda may be old or out of date! Swap it out for new 😊 ✨3. You aren’t refrigerating or freezing your cookie dough/ baking with warm butter. I prefer to freeze all of my cookie dough balls for at like 6 hours, this helps them not melt down as fast when they’re baking and keep shape! If I’m in a pinch, I’d use very cold cubed butter! ✨4. Shaping-I always shape my dough balls into tall cylinder like shapes! That spending our own money to start the Farmstand wasn’t actually a big deal, because we would earn it back quickly 4. That Sourdough bread sold like hot cakes at $15 a loaf 5. That not having a perfect Farmstand to start with was actually a benefit, because it allowed us to grow at our own pace. So do you want to start a Farmstand? And don’t know where to start? Here’s my three steps to get going. 1. Google Cottage Foods and your State. Look at the laws your specific state has regarding the sale of home baked goods. Cost to do this: free! 2. Go to your local thrift store and pick up an old piece of furniture. Make it into a Farmstand. Cost estimate: $300-$500 3. Choose grandma’s old cookie recipe that you’ve had in the cupboard for the last 12 years of your life. Make a batch, package it up, and put it in your Farmstand. (Instagram + Facebook groups) Special thanks to my fellow hispanic baker @leafandloafco I love her content , she also use the double loaf pans for her micro bakery. I am also here just spreading the word with you, and sharing how I DO IT, a few tricks & Tips that I found useful while starting baking this way. I love baking this way for my customers! No more heavy Dutch Ovens + baking for hours and hours to get to 50 + loaves every week. 🌾 This allows me to reduce my baking time and spend more time with my family. 🌾 The loaf shape makes it way easier to cut. 🌾 I keep using my original boule recipe. Some people use this method of the loaf tin but open bake and have amazing results too, I personally prefer this way. (Using 2 identical pans, one used as a lid to lock the steam) 💁🏽‍♀️ I do this for the first 40 minutes then I take the lid off. I use a big cookie sheet to place them all at one so I don't lose much of the oven temperature while opening. Temperature control is crucial during baking. 💁🏽‍♀️ I also started adding rice on the bottom of the pan + unbleached parchment paper to avoid burning bottoms and avoid using oil. I remember when I first started making sourdough, I was taught to feed it a 1:1:1 ratio, meaning 1 — ⬇️ No one told me these tips, so I'm telling you. I remember when I first started making sourdough, I was taught to feed it a 1:1:1 ratio, meaning 1 part sourdough, 1 part flour, and 1 part water. No one ever told me how feeding ratios worked or that you can manipulate your starter so that it fits into your schedule. When I started making sourdough, I wasted so much flour because I wasn't ready to bake, so I'd refeed my starter to get it at peak again (because I was told the importance of using your starter at peak. Also, I had no clue you could pop your starter in the fridge and use it later. Ok, make sure to save this post so you can reference it when you need it cause I'm about to drop some feeding tips 📌⬇️ If you’re new to making sourdough, feeding your starter can feel overwhelming. Everyone seems to feed their starter different ratios, but the power is understanding it so you can find what works for you. I've said this before, but I'm a big believer in making sourdough work for your schedule and not the other way around. I wish someone would have given me these tips 👇🏼 〰️ If you want to have your starter ready first thing in the morning, you can feed it a higher ratio like 1:5:5 before you go to bed (you could do 30g of starter for example, 150g of flour, and 150g of water (I do like to cut my water a tad to 140g to have a thicker starter) 〰️ If you want your starter ready sooner, within let’s say, 4-6 hours, then you can do a 1:1:1 or 1:2:2 ratio. A higher feeding ratio takes longer for the starter to feed and peak. It’s really that simple. 〰️ You can play with your water temperature if you want your starter to peak sooner. I’ve mixed hot boiling water with cold water when feeding my starter to speed up the process. You just want to make sure your water doesn’t go above 110F as it will kill off the yeast. I try not to go above 90F. Alternatively, you can use cold water if you want to slow it down. Get where I'm going with this.
