JAPANESE MILK BREAD The entire loaf has already been devoured by my children. The trick is the Tangzhong, which gelatinizes the starch creating an ultra soft crumb. You’ve got to use bread flour. Regular flour doesn’t contain enough protein to ensure a solid final product. Tangzhong: 25 g bread flour 125 g whole milk Cook this over medium heat until it looks like mashed potatoes and then cool to room temp. Dough: 350 g bread flour 50 g sugar 6 g salt 7 g yeast 120 g whole milk, room temp 1 large egg Tangzhong 50 g butter, room temp Add all your ingredients except butter into a mixer and mix with a dough hook for 6-8 minutes. Add butter and knead for 4 more minutes. Remove, roll into a ball, place dough into an oiled container, cover with a cloth and let rise for 90 minutes. Remove, portion into 3 equal portions, and roll each into a rectangle. Fold the sides to the middle and then roll like a crescent roll. Place the 3 loaves into your oiled pan, cover and let rise till it’s 90% up to the top. Bake at 350 for 30 minutes, remove immediately, and let cool to room temp. This will test all of your patience but is necessary to allow the starches to set up. Keep cooking! #shokupan #japanesemilkbread #milkbread #baking #bread

The BEST and ONLY cinnamon roll recipe you will ever need! This Asian bread making technique makes these rolls super moist and fluffy. Literally the cinnamon roll of your dreams! Tangzong: 5T water 5T milk 1/4c flour Dough: Cooled Tangzhong 1 egg 1 1/2c whole milk 1/4c granulated sugar 1 1/2tsp kosher salt 2tsp vanilla 1 packet (2 1/4tsp) rapid rise yeast 5 1/2c AP flour 1/2c (1 stick) softened butter Filling: 1 stick softened butter 1c dark brown sugar 2T ground cinnamon Frosting: 8oz cream cheese, room temp 4T butter, room temp 1 1/2c powdered sugar 1/2tsp salt 1tsp vanilla 1T heavy cream Make Tangzhong: Whisk water, milk, and flour together in small sauce, pan. Place over medium heat and continue whisking until a smooth paste forms. Allow to cool. For Dough: In bowl of stand mixer combine cooled Tangzhong, egg, sugar, milk, vanilla, salt, and yeast and whisk to combine. Add in flour and place dough hook on stand mixer and knead for 18 to 20 minutes until very smooth. Add in butter 1-2 Tbsp at a time and continue mixing on low until fully incorporated and dough does not stick to sides of bowl. Remove bowl, cover, and allow to proof for 60-90 minutes until doubled in size. Punch down dough and place into floured surface. Roll out into large rectangle about 24in x 14in. Spread with softened butter and top with cinnamon and brown sugar mixture. Starting from one of the 24in sides roll the dough into a tight log. Cut off ends and then slice into equal portions using serrated knife or unflavored dental floss. Place into greased 9x13 baking pan and allow to proof for 45 more minute before baking. Bake at 350 deg for 25-30 minutes until risen and golden on top. Frosting: In stand mixer with paddle or electric mixer beat cream cheese and butter together. Scrape down bowl then powdered sugar, vanilla and cream. Adjust consistency as desired: more powdered sugar to make thicker, more cream to thin out. Spread frosting into rolls and dig in!!!!!! #cinnamonrolls #baking #homebaker #brunch #milkbread #masterchef #chef #foodie #foodporn

There are variations in Japan (where it’s known as shokupan) as well as China. In Chinese bakeries, you’ll find it in various forms: loaves, sliced, pull-apart buns, and as the basis for a wide variety of Hong Kong Style bakery buns. It is incredibly simple to make—just dump all the ingredients into a bowl and knead. Importantly—no tangzhong required!
