As a former home-bake, I wish I’ve had this guidance when I started out. Because trust me when I say, I made many mistakes and it took me a long time to learn how to fix them 😂
And that’s actually why I’m making this series: To share what I know, from one passionate baker to all my fellow home-bakers 🥐
In this first episode, we’re diving into my favorite decoration technique, mirror glazing, and how to fix the most common mistake: air bubbles!
Air bubbles are mainly caused by 3 things:
1. Your blender angle is wrong:
Once you’ve combined your syrup and chocolate,
DO NOT insert your immersion blender straight down.
Instead, insert the blender at an angle, making sure the blender head is touching the jug and leaning against the side.
Tilt the jug, insert the blender at an angle, with the blender leaning against the side, then level the jug back.
This lets you blend steadily without pulling in air.
Moving the blender up and down traps air bubbles in the glaze.
2. Your blender is the problem.
A closed blender head, like the one I’m showing in the video, traps air, while a more open blender head (I use @bamixofswitzerland ) blends smoothly without pulling in bubbles.
3. How you cool your glaze.
Press cling film directly onto the surface of the glaze.
This helps it cool evenly and prevents air from being incorporated.
Stir gently every 5–10 minutes, and only remove the cling film once the glaze is close to the right temperature. Avoid stirring it much after this.
Remove any remaining bubbles with a spatula.
Follow these steps and you’ll get a flawless bubble-free glaze ✨
