Aaj bhi Tamil Nadu, Andhra, Kerala tak ye alag-alag naam se banayi jaati hai, par soul ek hi rehti hai — simple, honest, powerful. Ingredients: • Ragi flour – 1 cup • Water – 2½ cups • Ghee – ½–1 tsp • Salt – to taste Method: 1️⃣ ½ cup paani mein ragi flour mila kar smooth slurry bana lein. 2️⃣ Kadhai mein 2 cups paani, namak aur ghee daal kar boil karein. 3️⃣ Flame low karke slurry dheere-dheere daalein, lagataar stir karein. 4️⃣ Jab mixture thick ho jaye, medium flame par press & fold karein. 5️⃣ Dhak kar low flame par 5–7 min dum dein. 6️⃣ Lid hata kar achhe se beat karein jab tak shiny aur elastic ho jaye. 7️⃣ Geelay haathon se ball shape (mudde) bana lein. Serve hot with: Saaru • Bassaru • Mutton curry • Ya bas ghee 🤍 👨‍🍳 Chef tip Ragi ko seedha paani mein mat daaliye — pehle slurry banane se lumps kabhi nahi bante.
