I mixed this classic artisan loaf for a friend… then ended up feeling awful and went to sleep fully expecting this dough to be done for, just like my voice. Twelve hours later, I woke up shocked — perfectly proofed, plenty of time left to shape, and still beautiful enough for a cold proof. The secret? Ice-cold water. Cold water slows fermentation, stretches your peak window, and gives your dough time to build strength instead of racing toward over-proofing. That extra control is exactly what keeps loaves from going flat. Moral of the story: slow dough is forgiving dough. Sometimes doing less actually gives you better bread. 🥖✨

GBD - golden, brown and dense 😂 What NOT to do when making focaccia 👉 1️⃣ Don’t over-proof 2️⃣ Don’t walk away from the oven 3️⃣ Don’t pretend “golden brown” means “more time!” Fail → Learn → Repeat. Turn one sourdough batard into two demi baguettes⤵️ You don’t need a special recipe or baguette pan for this. How to do it: • Start with a fully proofed sourdough batard (cold proofed overnight) • Turn it out onto parchment • Use a bench scraper to cut it cleanly in half • Flip each piece so the cut side is facing up • Gently pinch the seams closed to build surface tension • Bake like you normally would Bake: 460°F Covered: 18–20 minutes Uncovered: 12–15 minutes (You’re looking for a deep golden crust and an internal temp around 205°F.) Let cool for at least 1 hour before slicing. The crumb finishes setting as it cools. This is a great option if you want smaller loaves, faster cooling, or a fun switch-up without changing your dough or schedule. ✨ Favorite tools I love & recommend (all linked in my bio): • Loaf pans — great for the two-pan method; I use the small size, find them in my Amazon storefront • Krustic Dutch oven, for classic artisan bakes; code THEVILLAGEBAKEHOUSE saves $15 • Good Leaven Co bread mat, makes transfers safer and easier and helps prevent over-browned bottoms; code THEVILLAGEBAKEHOUSE saves 10% • Flourside (medium oval is my fav) wood pulp banneton, code TVBH5 saves 5% Save this for the next time you want two loaves from one. One of the employees also over proofed a batch. Not the start we were hoping for during Ramadan. But that’s part of baking. Some days the croissants cooperate and some days they absolutely do not. The good news is the Dragon Ball Z Goku croissant came out amazing 🥐 Trying to stay focused on the positive and hoping we get everything just right at the bakery on day 25. 100% whole grain einkorn and no shaping required. 🌾 🍞 This is one of those loaves I keep coming back to because it tastes incredible and it is unbelievably simple to make. The dough is mixed like a thick batter, poured into pans, proofed for about 40 minutes, and baked. No tension building. No complicated folds. No chasing oven spring. Einkorn behaves differently than modern wheat. It has weaker gluten and absorbs water in its own way, which is why this formula uses boiling water to gelatinize the starches and build structure without relying on gluten development.
