Prosciutto di Carpegna PDO is one of Italy’s most underrated prosciutti crudi (cured hams) — and it’s protected by some of the strictest regulations in Italian food.
It’s produced exclusively in Carpegna, a small mountain town in the Marche region, where the cool, dry air naturally supports slow curing. Only Italian pigs, specific cuts of the leg, and a carefully controlled process are allowed under the PDO rules.
Unlike many types of prosciutto, Prosciutto di Carpegna is seasoned lightly, cured slowly, and aged in a naturally ventilated environment. The result is a prosciutto that’s delicate, less salty, and incredibly tender, with visible muscle fibers and no shortcuts.
