7 days 7 eggless chocolate recipes- Ep. 1- No bake mini chocolate cheesecake🧀 Ingredients: • Cream cheese- 150 gm (3/4 cup)- room temperature • ⁠Castor sugar- 30 gm (3 tbsp) • ⁠Dark chocolate- 50 gm (3/8 cup) • ⁠Whipping cream- 90 mL (1/4 cup + 1/8 cup) • ⁠Oreo’s (or any other chocolate biscuit)- 10 • ⁠Melted butter- 30 mL (3 tbsp) • ⁠5 inch cake ring, cake mould, any container to set cheesecake in For the topping (optional): • Dark chocolate- 40 gm (1/4 cup) • ⁠Amul fresh cream- 24 gm (2 tbsp) Method: • Take crushed biscuits and add melted butter. Mix and press this mixture down in a cake ring or any container of your choice to make the base of the cheesecake. Set in the fridge while we make the batter. • ⁠In a bowl- take room temperature cream cheese, castor sugar and melted dark chocolate. Mix until there are no lumps. • ⁠In another bowl, take chilled whipping cream and whip on medium speed for 3-4 minutes. Increase the speed to max and continue to whip until you have a stiff whipped cream. • ⁠Add this whipped cream in the cream cheese base and mix well using a whisk. • ⁠Transfer this mixture to the cake ring and smoothen the top. • ⁠Let this set in the fridge for 2-3 hours and enjoy! • ⁠I topped the cheesecake with ganache which I made by melting together dark chocolate and Amul fresh cream (2:1 ratio), you can also top it using Nutella.
