Crispy on the outside, soft on the inside, packed with flavor, and honestly one of the easiest meals ever. Ingredients • 1 cup @seedsofchange Spanish Rice with Quinoa, Peppers & Corn • 2 eggs • ½ cup shredded Monterey Jack cheese • ¼ cup black beans • Shredded iceberg lettuce • Sour cream • Green onion, sliced • Taco sauce • Extra Monterey Jack for topping Instructions 1. Preheat your waffle maker and lightly grease if needed. 2. Spread the Spanish rice mixture evenly in the waffle maker. 3. Crack the 2 eggs directly over the rice. 4. Sprinkle ½ cup Monterey Jack over the top and close the waffle maker. 5. Cook about 5 minutes, until the eggs are set and the bottom gets crispy. 6. Carefully remove and top with black beans, lettuce, sour cream, green onion, taco sauce, and extra Monterey Jack. Crispy, cheesy, saucy… basically a Mexican-inspired chaffle taco situation and it’s ridiculously good. #wafflerecipes #highproteinmeals #quickdinner

After a long day of cheffing, the last thing I want to worry about is cooking myself an elaborate meal. @seedsofchange makes my life so much easier, I love to pair it with my chicken teriyaki. #SeedsOfChangePartner #ad See the recipe below: 4 boneless skinless chicken thighs 1/4 cup soy sauce 1 tbs rice wine vinegar 1 tsp sesame oil 1/4 cup honey 3 cloves of garlic, grated 1 tbs of ginger, grated Preheat oven to 375°F Season chicken with salt & pepper on each side Whisk all sauce ingredients together Sear chicken in a hot pan for 2-3 minutes per side Pour sauce over the chicken, let the sauce thicken and come to a boil Pop the pan in the oven for 15 minutes Serve alongside @seedsofchange quinoa & brown rice Enjoy!

Saves SO much time and allows you to throw this together quickly! What you need: 1 pack of seeds of change quinoa and brown rice! I used half of it but you can use the whole thing if you want to double and save for meal prep! 1/2 of an English cucumber 1/4 cup (depends on preference) of red onion 2 hard boiled eggs or protein of choice Avocado Organic olive oil A squeeze of lemon juice!
