Mexican-Inspired Chaffle
If you’ve never put rice in a waffle maker… this is your sign. Crispy on the outside, soft on the inside, packed with flavor, and honestly one of the easiest meals ever.
Ingredients
• 1 cup @seedsofchange Spanish Rice with Quinoa, Peppers & Corn
• 2 eggs
• ½ cup shredded Monterey Jack cheese
• ¼ cup black beans
• Shredded iceberg lettuce
• Sour cream
• Green onion, sliced
• Taco sauce
• Extra Monterey Jack for topping
Instructions
1. Preheat your waffle maker and lightly grease if needed.
2. Spread the Spanish rice mixture evenly in the waffle maker.
3. Crack the 2 eggs directly over the rice.
4. Sprinkle ½ cup Monterey Jack over the top and close the waffle maker.
5. Cook about 5 minutes, until the eggs are set and the bottom gets crispy.
6. Carefully remove and top with black beans, lettuce, sour cream, green onion, taco sauce, and extra Monterey Jack.
Crispy, cheesy, saucy… basically a Mexican-inspired chaffle taco situation and it’s ridiculously good.
