IRCreamy tomato and spinach pasta 🍅
Ingredients:
8oz spaghetti
1 tbsp oil
1 tbsp butter
3 cloves of garlic, sliced
1 yellow onion, finely chopped
1 cup cherry tomatoes, halved
1 cup spinach
2 tbsp tomato paste
1/2 cup chicken broth or 1/2 cup water + 1 chicken bouillon cube
1 tbsp lemon juice
1 cup unsweetened heavy whipping cream
3/4 cup freshly grated Parmesan cheese
1 tbsp freshly chopped parsley
Salt to taste
1 tsp red chili flakes
1/2 tsp garlic powder
1/2 tsp black pepper powder
1 tsp smoked red paprika powder
1/2 cup pasta water
Method:
Boil the spaghetti according to the package instructions and set it aside. Reserve some pasta water for later use.
In a pan, heat oil and butter. Once the oil is hot and the butter is melted, add in the garlic. Sauté for 30 sec or until fragrant. Then, add in the onion and sauté for 1 minute until it becomes translucent.
Next, add in the tomatoes and sauté for 1-2 minutes. Then, add in the tomato paste and spices. Mix well to combine.
Pour in the chicken stock and squeeze in the lemon juice. Let the mixture simmer for 2-3 minutes. Then, add in the heavy whipping cream and cook on medium-low heat until it starts to thicken. Add in the spinach and let it cook for 1 minute. Finally, lower the heat add in the freshly grated Parmesan cheese and mix well. Once the sauce thickens, taste and adjust the salt accordingly.
Finally, add in the cooked pasta and mix well until it is fully combined. Add more Parmesan cheese on top if desired, garnish with freshly chopped parsley, and serve warm.
Note: Use reserved pasta water to loosen the sauce if it thickens too much.
