These Flower Pot Sugar Cookies are the perfect healthy Mother’s Day dessert! Comment “recipe” and I’ll send you the printable recipe🌹 ⭐️ Follow for more simple, healthier, fun recipes ⭐️ The strawberry roses look fancy, but they’re actually super easy to make! You also do not need many ingredients to make this gluten-free dessert! ✨ Flower Pot Sugar Cookies ✨ (makes 12) Sugar Cookie Ingredients: 2 cups almond flour 2 tbsp honey 2 tbsp coconut oil, melted 1 tsp vanilla extract 1 egg Chocolate Mousse Ingredients: 1/4 cup coconut cream (the solid part at the top of a can of coconut milk) 6 tbsp chocolate, melted “Cookie Crumb” Ingredients: (you could also just use crushed cookies) 1/4 cup almond flour 1 tbsp cacao powder 1 tbsp coconut oil, melted 2 tbsp coconut sugar Other ingredients: 12 strawberries 6 lollipop sticks, cut in half Instructions Preheat oven to 350F (180C). Grease a mini muffin pan. Mix together the sugar cookie ingredients. Add 1 tbsp of dough to each mini muffin and use a measuring spoon to create a valley in the dough. Bake for 8-10 minutes, or until the edges turn golden brown. While the cookies are baking, make the chocolate mousse by mixing all of the ingredients together and place in the fridge to thicken. Make the cookie crumbs by mixing all of the ingredients together. Once the cookies have cooled, remove them from the pan, fill with chocolate mousse, and top with cookie crumbs. Place back in the fridge for mousse to thicken. Insert a lollipop stick at the stem of the strawberry. Using a paring knife, slice 4-5 slits along the bottom of the strawberry. Continue up the strawberry, cutting slits to create a rose. Place the rose in the flower pot and enjoy!

This raspberry tiramisu is unreal 🤩 Ultra fluffy raspberry mascarpone, raspberry-soaked ladyfingers, with white chocolate flakes on top 🤍 Raspberry Syrup: 4 cups raspberries (fresh or frozen) ½ cup water ¾ cup granulated sugar 1 tablespoon lemon juice Mascarpone Filling: 1½ cup heavy cream 16 ounces mascarpone cheese ¾ cup granulated sugar ¾ cup raspberry syrup (from above) 1 teaspoon vanilla extract For Assembly: 1 (7 oz) package Savoiardi ladyfinger (about 24) About 2 tablespoons white chocolate (I used a Ghirardelli chocolate bar) Raspberry Syrup: -Add raspberries and water to a saucepan over medium-high heat. -Mash the berries and bring to a simmer. Lower the heat and simmer for about 2 minutes. -Strain through a fine-mesh sieve, pressing to extract all the juice. Discard the seeds. -Return the juice to the pan. Stir in sugar and lemon juice. -Bring to a boil, then simmer 4–5 minutes until slightly thickened. -Let cool completely before using. Filling: -Whip the heavy cream in a large bow will a hand mixer until stiff peaks form. Set aside. -In a stand mixer with the paddle attachment, beat mascarpone, sugar, raspberry syrup, and vanilla extract until smooth. -Mix in about 1 cup of the whipped cream until combined. -Gently fold in the remaining whipped cream. Assemble the Tiramisu: -Quickly dip each ladyfinger in raspberry syrup. -Arrange in an even layer in a dish. -Spread half of the mascarpone filling on top and smooth. Grate half of the white chocolate over it. -Repeat with another layer of dipped ladyfingers. -Spread half of the remaining filling on top and smooth. -Pipe other half (optional) and grate the rest of the white chocolate over the top. They are so refreshing and delicious😋 • Ingredients: 1 cup blueberries, fresh or frozen, I used frozen wild blueberries (240 ml) 1/2 cup (lactose-free) Greek yogurt (120 ml) 100 g / 3.5 oz. dark chocolate, melted (80% dark chocolate) • 1. Mix the blueberries and yogurt together (if you are using frozen berries, you might need to add extra 1/4 cup/50 ml of the yogurt) 2. Spoon dollops onto a plate lined with parchment paper 3. Freeze for 1 1/2 - 2 hours 4. Dip in melted dark chocolate (let the chocolate cool down before dipping), make sure that the bites are fully covered in the chocolate 5. Store in the fridge. They last in the fridge for a couple of days. When stored in the fridge they will have a soft consistency. Sweets on Repeat, ep. 2: passionfruit posset 🌈 Only 4 ingredients! No cornstarch or gelatin, just lemon to set your heavy cream. The next time you’re tasked with bringing dessert, let it be this! You can posset just about anything, I sure do. What’s next??? Makes ~10 possets (depending on the size of your passionfruits) Ingredients 10 passionfruits and their juice, strained and save the seeds 1.5 tablespoons fresh lemon juice 1.5 cups heavy cream .5 cup granulated sugar Make it! 1. Slice passionfruits in half longways. Scoop out insides and strain out the seeds, but don’t throw them out! 2. Juice a lemon to obtain 1.5 tablespoons. 3. In a large sauce pot or dutch oven, combine the heavy cream and sugar over medium until sugar dissolves. Turn heat up to medium-high and bring cream to a boil, stirring constantly. Boil for 3 minutes, stirring (adjust heat down if the mixture threatens to boil over). Pull pot off heat and whisk in passionfruit and lemon juices. Let sit for 10 minutes. 4. After sitting, whisk mixture vigorously (you’ll see that its already starting to coagulate). Pour into the passionfruit cups, filling almost to the top. Wrap each one with plastic wrap and chill for a minimum of 5 hours, or overnight. 5. When you’re ready to serve, add a few passionfruit seeds to the center of each posset. In a stand mixer, add 4.5 cups all purpose flour, 1 egg, 2 tsp salt, 1/2 cup sugar, 2 tsp active dry yeast, 1 cup milk, 1/2 cup water. Mix on medium-low for 8 minutes. Then add 1 stick @tillamook butter. Mix for another 8 minutes. Add to a greased bowl. Cover. Let proof overnight (or 1.5 hour at room temp). 2. Turn down out, punch down. Roll into a 10x13 in” rectangle. Punch out 3” circles. Add to two parchment lined baking sheets that have been greased. Cover and let proof 1 hour in a warm spot. 3. Fry 4 donuts at a time in 350F vegetable oil, 2 minutes a side. Transfer to a wire rack. 4. In a medium pot, whisk 2/3 cup sugar with 1/2 cup cornstarch. Then whisk in 9 egg yolks. Then 3 cups milk, 1 tsp salt. Whisk over medium heat until very thick. Stir in 4 tbsp butter, 1 tsp vanilla, lavender extract to taste. Chill completely. 5. Fill donuts. Then glaze donuts with a thick powdered sugar icing that has some lavender added to it. This is my elevated take on classic banana pudding and it’s light, creamy, and perfect for spring gatherings. Make it ahead, let it chill overnight and enjoy the next day! For the Brown Butter Nilla Wafer Crust Ingredients 2¼ cups (about 240g) crushed Nilla wafers ½ cup (113g) unsalted butter 1 Tbsp granulated sugar Pinch of salt Instructions Brown the butter over medium heat until deeply golden and nutty. Once brown bits form on the bottom, stir constantly so it doesn’t burn. Immediately remove from heat and transfer to a heatproof bowl. Stir in crushed wafers, sugar, and salt until evenly combined. Press firmly into the bottom and slightly up the sides of a 9-inch pie dish, using a flat-bottomed measuring cup to compact the crust. Bake at 350°F (175°C) for 10 minutes, until fragrant and lightly golden. Allow to cool completely. For the Caramelized Banana Layer Ingredients 3 ripe but firm bananas, sliced ½-inch thick 3 Tbsp unsalted butter ¼ cup (50g) light brown sugar 1 Tbsp granulated sugar Pinch of salt ½ tsp vanilla extract Instructions Melt butter in a large skillet over medium heat. Add both sugars and salt; cook until bubbling. Add bananas in a single layer. Cook 1–2 minutes without touching, then continue cooking for another 2–3 minutes, until a thick, glossy sauce forms and a spatula leaves a trail in the pan. Do not overcook, we want the bananas tender but intact, not completely broken down. Remove from heat, stir in vanilla, and let cool slightly.
