CHEESY STUFFED CAPSICUMS INGREDIENTS • 8 medium red capsicums • 400g crushed tomatoes • 300g zucchini (grated or finely chopped) • 1,000g lean beef mince • 80g tasty cheese • 200g brown onion (diced) • 100g pizza sauce • 150g carrot (grated) • 25g minced garlic • 200g broccoli (finely chopped) • 2 beef stock cubes • 2 tablespoons Worcestershire sauce • 1 teaspoon mixed herbs • Salt & pepper to taste METHOD Step 1: Chop the top off each capsicum and remove the insides. Step 2: Finely dice your onion. Grate your carrot and zucchini. Finely chop your broccoli. Heat a saucepan on medium heat and add a little olive oil. Step 3: Add your onion and 1 tablespoon of minced garlic, and cook until slightly browned. Step 4: Add your mince and break it up as it cooks. Once it’s nearly cooked through, add your 2 stock cubes and let it simmer for a couple of minutes. Step 5: Add your vegetables - broccoli, zucchini, carrot plus the Worcestershire sauce, salt & pepper, and mixed herbs. Cook for a few minutes on low. Step 6: Add your crushed tomatoes and pizza sauce. Cook on low for 4–5 minutes. Step 7: Once all ingredients are cooked, grab your hollowed capsicums and stuff them to the top. Add cheese on top of each one. Step 8: Place them in the oven at 185°C for 10–12 minutes, or until the capsicums have softened and the cheese is browned on top. Step 9: Grab them out of the oven, let them cool for a few minutes, let them cool down a little bit then enjoy. NUTRITION FACTS (PER 1 SERVING) Calories: 594 Total Fat: 17 g Total Carbohydrates: 64.6 g Protein: 60.4 g
