STFried Sweetbreads | How to Cook:MEAT | Episode 6
Blanch the sweetbreads for 20 seconds & put in ice water to stop the cooking. Peel the membrane off.
WET BATTER
100g plain flour
1 egg
100ml still water
DRY BATTER
50g plain flour
5g black pepper
4g salt
5g paprika
5g powdered chilli
Double pané to get beautiful flakes on the outside. Cook for 5 minutes at 160C.
