QUICK. 😋✨ a quick lunch for us, but adding some grilled chicken…🤌🏼💋 (Serves 2) 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: • 8 oz fettuccine or spaghetti (about ½ standard box) • 2 Tbsp butter • 3 garlic cloves, minced (about 1 Tbsp) • 1½ cups chicken broth • 1 cup milk • 1 cup finely grated Parmesan cheese • ½ tsp salt (adjust to taste) • ¼ tsp black pepper • Fresh italian parsley, chopped ⸻ 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬: 1. Using a wide pan over medium heat, melt the butter. Add garlic and cook 30 seconds until fragrant. 2. Pour in chicken broth and milk. Season lightly with salt and pepper. Add dry fettuccine and press it down so it’s mostly covered. 3. Bring pasta to a gentle simmer. Cook 10–12 minutes, stir it very often until pasta is tender and sauce thickens. 😋 4. Lower the heat & add in Parmesan until it is creamy and smooth. 5. Spicy, creamy, and exactly what your dinner plans ordered 😮‍💨🔥 Perfect for two… or just you 😉 What you’ll need: Pasta • 8 oz rigatoni (half box) • Salted water, as needed • 1 cup reserved pasta water Creamy Chipotle Sauce • 1 tbsp butter, divided • 1 tbsp olive oil • 4 cloves garlic, minced • 1 small shallot or ½ small onion, diced • 2 tbsp tomato paste • 1–2 chipotle peppers in adobo, minced (adjust for heat!) • 1 cup heavy cream, plus more if needed (room temp) • ¾ cup freshly grated parmesan • ¼ cup shredded mozzarella (optional) • ½ tsp sugar or honey (to balance the heat) • ½ tsp red wine vinegar • Salt & black pepper, to taste Instructions: ✨ Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve 1 cup pasta water, then drain. 🍝 Heat olive oil + 1 tbsp butter in a skillet over medium. Sauté shallot 2–3 min until soft, then garlic 30 sec until fragrant. ✨ Stir in tomato paste and cook 2–3 min until it deepens in color. Add minced chipotle peppers and cook 30 sec. Deglaze with a splash of reserved pasta water. 🍝 Lower heat, then add cream + a splash of pasta water. Stir in parmesan, sugar (to balance heat), salt, and pepper. Simmer until smooth and glossy. Mix everything together and pour ⅓ over your protein to marinate while you prep the rest, reserving the remaining ⅔ for the sauce. For the creamy sauce: sauté ½ cup finely diced white onion in a bit of oil until translucent, add 2 tsp tomato paste and cook for a minute, then remove from heat briefly and stir in 1½ cups water and ¾ cup cream (or 1 can full-fat coconut milk + ½ can water for dairy-free), the reserved marinade, 1½ tsp fresh thyme, and 2 bay leaves. 𝐄𝐀𝐒𝐘 𝐑𝐄𝐂𝐈𝐏𝐄 𝐁𝐄𝐋𝐎𝐖 👇🤤 ✨ Creamy Marry Me Chicken Pasta ✨ THE coziest creamy chicken pasta… and it’s all in one pot 😍🥳 my husband asked to add this to our regular meals… so trust me this is recipe is worth saving 🤭😇 also in LOVE with my giant cutie mugs from @anthropologiehome 😍✨ 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: (Serves 2–4) • 1 tbsp oil from a jar of sun-dried tomatoes • ¼ cup sun-dried tomatoes, sliced • ¾ cup yellow onion, diced • 2 garlic cloves, minced • 1½ tbsp tomato paste • 3–4 cups chicken broth (depending how thick you like your soup) • ½ cup heavy cream • 1 tsp kosher salt (or to taste) • ¾ tsp Italian seasoning • ½ tsp each of garlic & onion powder • pinch of crushed red pepper flakes • 4 oz uncooked shell pasta • 1½ cups fresh baby spinach, chopped • 2 tsp fresh basil, chopped • 1 cup shredded rotisserie chicken • 4 oz cream cheese, cubed and softened • ⅓ cup freshly grated parmesan (plus more for topping) 𝐓𝐢𝐩: I always add a little extra of my seasonings!! Recipes are helpful, but don’t let them confine you…. taste as you go & then adjust before serving to get the flavor just right. 🥰 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬: • Heat the sun-dried tomato oil in a large pot over medium heat. Add the onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds until fragrant. • Add the tomato paste and sun-dried tomatoes. Cook about 2 minutes, and be sure to stir often, until the tomato paste deepens in its color. • Pour in the chicken broth and heavy cream. Stir in basil, salt, Italian seasoning, garlic powder, and red pepper flakes. Bring to a gentle simmer and cook 8–10 minutes. • Add the pasta and reduce heat to medium-low. Cook 10–12 minutes, stirring occasionally, until the pasta is tender. 😋 • Lower the heat and stir in spinach, shredded chicken, cream cheese, and parmesan. Stir until the cheese melts and the soup becomes creamy, about 3–5 minutes. • Ladle into bowls and top with EXTRA parmesan and fresh basil. easy steak dinner recipe below👇🤤 all for my @ethan.elms 🍯♥️ steakhouse dinner at home 🥩🧄✨ ribeyes • creamy yukon mash • pan asparagus • cajun roasted garlic aioli 💋🤌🏼 INGREDIENTS (serves 2) Ribeyes: • 2 ribeyes (1–1½ inch thick) • Salt + black pepper + @kindersflavors Garlic & Herb Seasoning Basing: • 3 tbsp butter • 4–5 garlic cloves, smashed • Fresh thyme + rosemary Creamy Yukon Gold Mash • 4 Yukon gold potatoes • 4 tbsp butter • 3–4 oz cream cheese • Salt + pepper (to taste) Asparagus • 1 bunch asparagus • Salt + pepper Cajun Roasted Garlic Aioli • 1 head garlic • Olive oil (for garlic bulb) • ½ cup mayo • 1 tsp Dijon mustard • 1 tsp lemon juice • 1 tsp Cajun seasoning • ½ tsp smoked paprika • pinch cayenne • Salt + pepper ⸻ Instructions: • Roast garlic in tinfoil at 400° for 35–40 minutes until soft and golden. • Boil your yukon gold potatoes at 400° for 15-20 minutes until fork tender. Let them cool slightly, then scoop out the flesh (no peeling needed). • Mash the potatoes with butter, cream cheese, salt, and pepper until smooth and creamy. • Pat ribeyes dry and season generously with salt, pepper & seasonings. • Sear steaks in your skillet 3–4 minutes per side. With an internal temp of 135°F for medium-rare. • Add butter, smashed garlic, thyme, and rosemary during the last few minutes and baste continuously. Let the steaks rest for 10 minutes before slicing. • In the same pan, cook asparagus in the steak drippings for 4–5 minutes until tender-crisp. Season them lightly. • Squeeze roasted garlic into a bowl and mash. Stir in mayo, Dijon, lemon juice, Cajun seasoning, smoked paprika, cayenne, salt, and pepper to make the aioli. • Slice steak and plate with creamy mash, asparagus, and a drizzle of roasted garlic aioli. 😍🤤 #steakdinner #dinnerfortwo #dinnerinspo #easydinner #dinnerisserved
