Recipe below 🍑🍋 4 extra ripe yellow peaches, pitted and chopped 8–10 lemons (enough for about 1 to 1¼ cups of fresh juice) 1 cup granulated sugar 2 teaspoons Himalayan salt 6–7 cups cold water Ice (as desired) In a blender, combine the chopped peaches, sugar, and a small splash of water. Blend until smooth then strain through a fine mesh sieve. Juice your lemons (enough to yield 1 to 1¼ cups of fresh lemon juice) and set aside. In a large pitcher, add ice, peach purée, lemon juice, and salt. Add 6 to 7 cups of cold water, depending on how strong you like your lemonade. Taste your lemonade & adjust with more lemon juice, sugar, or water as needed. Recipe below 🍓🍰 14 oz sweetened condensed milk 1 1/2 cups ice-cold water 3.4 oz instant French Vanilla pudding mix 3 cups heavy whipping cream Pinch of Himalayan salt 12-15 fresh strawberries, diced 1 box Nilla Wafers 1/4–1/3 cup graham cracker crumbs (for topping) 2–3 tablespoons freeze-dried strawberries, crushed (for topping) In a mixing bowl, combine the sweetened condensed milk and ice-cold water. Use a hand mixer on low speed to blend for 1–2 minutes until fully combined. Add the instant pudding mix and continue mixing on low to medium speed for about 2 minutes, until smooth and fully incorporated. Make sure there are no chunks of pudding mix remaining. Cover the bowl tightly with plastic wrap and refrigerate for 3–4 hours. Chill for at least 3 hours to ensure the mixture sets properly. The pudding is ready when it is firm, not runny, and has a jello-like consistency when scooped. (Wait until there are about 15 minutes left of chilling before starting the next step.) In a large bowl, combine the heavy whipping cream and a pinch of Himalayan salt. Using a hand or stand mixer on high speed, whip until stiff peaks form and the cream is thick and no longer runny. Gently fold the chilled pudding into the whipped cream in two batches, folding carefully between each addition until fully incorporated and smooth. Use a 9×13-inch square or oval dish. Begin with a layer of Nilla Wafers, followed by a layer of diced strawberries, then a layer of the vanilla cream mixture. Repeat this layering process three times, or until all ingredients are used. For the final layer, sprinkle graham cracker crumbs mixed with crushed freeze-dried strawberries over the top. Cover and refrigerate for a minimum of 7 hours before serving. I said yes to TOC feeling completely out of my depth. And honestly? That’s how this whole career has felt. Like I’m constantly walking into rooms where I don’t quite belong… …learning as I go …carving a path I haven't seen before And carrying more than just myself while I do it. I'm not complaining. It's an honour. But it also explains why things feel SO HARD sometimes!! So this dish—my Butter Chicken Salmon—is: 🔥 bold 🥄 comforting 💥 unexpected …but also a reminder: You don’t have to feel ready to show up anyway. (Note: In the video I made this with Arctic Char instead of salmon and it was ridonk!) Ingredients: 2 to 3 portions salmon 2 limes Salt Cumin seeds Kashmir chili powder Turmeric powder 2 inches ginger, peeled 5 to 6 cloves garlic 4-5 tomatoes on the vine 2-3 tbsp Avocado oil 1/2 stick unsalted butter 1/2 teaspoon cumin seeds 2 teaspoons kashmir chili powder 1 teaspoon garam masala Splash of heavy cream Pinch of dried fenugreek leaves Knob of butter to finish - Season fish with lime juice, salt, and pinches of cumin seeds, Kashmir chili powder and turmeric powder. Set aside - Grate ginger + garlic on the fine side of the box grater. Grate tomatoes on the coarse side, discarding skins - Heat avocado oil and butter in a large skillet over medium heat until butter just starts to brown - Add cumin seeds + ginger-garlic paste; season with salt. Cook until golden and nutty aroma - Stir in Kashmir chili powder + garam masala. Cook about 30 secs, until it doesn’t smell raw anymore - Add tomatoes, cook until sauce thickens slightly - Stir in a little water, cream, fenugreek leaves. Taste for seasoning. - Cook salmon in a nonstick skillet — add a little avocado oil, start with the fish skin side down. Once the skin is crispy, add a little butter and baste the salmon until cooked to your liking (you can also skip the basting and just flip the salmon over and cook to your desired cook). Serve! #bebrave
