Making it as a podi makes it super easy to include these ingredients in your everyday meals — just mix with rice and ghee, sprinkle over idli or dosa, or add it to vegetables. Simple to make, easy to eat, and such a nourishing addition to daily food. Easy right?
Black Sesame & Black Urad Dal Gunpowder (Podi)
Ingredients
• Black sesame seeds – ½ cup
• Black urad dal (whole) – ⅓ cup
• Cumin seeds – 1 tablespoon
• Black peppercorns – ½ teaspoon
• Garlic – 6 large cloves (with skin)
• Dry red chillies – 8
• Asafoetida (hing) – ½ teaspoon
• Curry leaves – a handful
• Tamarind - 3 inch piece
• Oil – 1 teaspoon (for sautéing)
• Salt – to taste
Method
1. Heat a pan on low flame. Add the black sesame seeds and dry roast slowly until they begin to pop slightly. Remove and keep aside to cool.
2. In the same pan, add the black urad dal and dry roast on low flame for about 8 to 10 minutes, stirring patiently until it changes colour. Remove and keep aside.
3. Add one teaspoon of oil to the pan. Add cumin seeds, black peppercorns, garlic cloves with skin, dry red chillies , tamarind and curry leaves together. Sauté until everything turns crisp.
4. Transfer this sautéed mixture to the plate with the roasted black sesame seeds and urad dal. Add asafoetida and salt.
5. Once completely cooled, grind into a medium-textured powder, not too fine and not coarse.

SUPalli Podi 🤌😌😇 Peanut podi 🤤
Quick recipe
• To a pan add peanuts and roast it
• Then to the pan add 1/2tbsp oil and roast dry red chillies 🌶️
• Then to the pan add chana dal, urad dal, coriander seeds, cumin, and roast for 1 min and add tamarind, rock salt and hing.. roast slightly
• Turn off the flame and add sesame seeds and roast it
• Allow it to cool down
• First make a coarse powder of dry chillies, and the mixture and add garlic cloves and make it a coarse powder
• Finally add peanuts and make a coarse powder
• Mix it well
• Now enjoy with hot rice and ghee/groundnut oil
Storage: if refrigerated, stays fresh for 2 months.. in room temperature stays fresh for 2 weeks.
