ERGRILLED OCTOPUS WITH PARSLEY GREMOLATA & SQUID INK MAYO is my 3rd dish for Feast of the Seven Fish and It tastes as good as it looks! You can find squid ink at your local specialty food store. I found mine @citarellagourmetmarket I had a very proud mommy moment, when I watched my kids go nuts for this dish.
For the Octopus
1- 1.5 lb octopus, cleaned
1/2 tbsp salt
Juice from 1/2 lemon
1 tbsp vegetable oil
-Rinse octopus well and then removed the eyes and beak. If this makes you nervous, ask your fishmonger to do it for you.
-Fill a large stock pot with water, lemon juice and salt. Bring to a boil and then lower to a simmer.
-Dip the octopus legs into the water, 2 or 3 times to get them to curl. This is purely for aesthetics.
-Lower the entire octopus into the water and let simmer for 50 to 60 minutes. You’ll know the octopus is done, when you can easily push a pairing knife into the thickest part of a tentacle.
-Once done, gently remove the octopus and let it air dry in the fridge for an hour. If you try to immediately use a paper towel to pat dry, you will end up removing the delicate skin.
-Once dry, preheat your grill to high.
-Cut octopus into pieces. I removed the head and then sectioned off the tentacles before coating in vegetable oil.
-Grill on high for about 4-5 minutes on each side or until the skin is charred and the tentacle ends are crispy.
-Plate octopus, top with gremolata (see recipe below) and serve with squid ink mayo (see recipe below)
Gremolata
1/4 cup fresh parsley chopped
1 small finely minced shallot
Juice from 1/2 large lemon
1/4 cup olive oil
1 tsp anchovy paste (optional)
Add all ingredients to a bowl and whisk.
Squid Ink Mayo
4 tsp squid ink (I found mine @citarellagourmetmarket )
1/4 cup mayo
Add ingredients to a small bowl and mix well.

BRHaute couture sourdough bread🤓 The first time I used squid ink was back in 2019. The first time I've heard of it was from Kristen @fullproofbaking (I miss her!)
Cuttlefish, squid ink, same thing if you find it under both names and wonder. Even though it's fishy and salty, that doesn't translate into the baked bread. I didn't have to reduce the salt. What it does is that it enhances the dough, it makes it so fluid, so pleasant to work with. It doesn't affect the rate of fermentation either (unlike charcoal powder) The texture of the crumb is glossy and extra soft. It's a true gourmet experience! Highly recommend! Putting together a beautiful sandwich with this bread is on another level. I had this idea of black on black and different textures so I decided to pair it with black sesame seeds. Absolutely incredible! For the dough I mixed 350g bread flour with 308g water, as a dissolved 10g of the squid ink in the water. But when I added to the flour it diluted and the color was more on the dark gray side. So I added more ink until I was satisfied with the shade of black(there are 500 shades of blacks by the way Hydration is 88%. Autolyse was short 30min. Then I added 70g starter, the color was diluted a bit again so I added a little more ink. One hour later I added 7g salt. Total bulk was 9h at 73-75F. Performed 3 coil folds separated by 45min. Shaped and brushed off most of the flour and brushed on egg white before I rolled it in the sesame seeds. Proofed in the fridge for 13.5h at 39F. Baked straight from the fridge as per usual: Can't wait to make it again!
