Today I’m making a fire-roasted corn salsa using yellow onions instead of red and frozen peppers from my freezer stash. This is how you make Economy Proof Cooking work for you—improvising for delicious results! 🌽 The “Use What You Got” Recipe: * 1 ½ cups corn (I used fresh corn on the stalk, roasted right on the stove burner!) * 1 teaspoon kosher salt * ¼ cup chopped onion (Recipe calls for red, but I had yellow—so we used yellow!) * ½ jalapeno pepper, seeded (Mine was pre-chopped and frozen—works perfectly) * 1 tablespoon minced fresh cilantro * 2 tablespoons lime juice 💡 Tips for this Recipe: * Roast it High: If you have a gas stove, don’t be afraid to put that corn directly on the grate.
