EASY 2 Ingredient Flatbreads 🥙   Why pay money for flatbreads at a supermarket when you can make them yourself using only two ingredients? Perfect to serve with a curry on a cold day, or they are great when packed with your favourite sandwich fillings. Don’t forget to grab one of my new books Healthy Fakeaways OR my 12 week meal planner.   Ingredients:  - 280g Self Raising Flour  - 250g Greek Yoghurt (I used 0% fat)     Method:    1. Add your self-raising flour and Greek yoghurt to a bowl and combine with a fork. Dust your surface with some flour and knead the mixture for a few minutes.   2. Form a ball with the dough and flatten. Cut the ball into four or eight (depending how small you like the flatbreads)  3. Flatten using a rolling pin and then transfer onto pan (medium-high heat). Cook for 2-3 minutes on each side.   4. Turkish Stuffed Flatbreads 🫓🔥 Dough 3 cups flour 2 tsp instant yeast 1 tsp sugar 1 tsp salt 1 tbsp olive oil 1 cup warm milk 2 tbsp yoghurt Mix, knead 8–10 mins, rise 1 hr. Filling 500g beef mince 1 small onion 2 garlic cloves 1 tbsp tomato paste 1 tsp cumin 1 tsp smoked paprika ½ tsp chilli flakes Salt + pepper Cook onion + garlic then add mince, add paste + spices and cook until browned. Cool completely. Assemble Divide dough into 6. Flatten, add 2–3 tbsp filling, seal like a dumpling. Flip, gently roll thick. Rest 15 mins. Cook them in a Dry pan, medium heat, 3–4 mins per side. Delicious cheese garlic flatbreads Dough Ingredients: • Flour - 350-380 g • Hot water (80 °C) - 200 ml • Salt - 1 tsp • Sugar - 2 tsp • Dried garlic (optional) - 1 tsp • Olive oil - 2 tbsp • Mozzarella cheese - 400 g (grated or cut into cubes; about 66-80 g per flatbread) For brushing: • Fresh cilantro (finely chopped) - 1 tbsp • Garlic (finely chopped) - 1 tsp • Butter - 2 tbsp (melted and mixed with the cilantro and garlic) Instructions: 1. Sift the flour into a bowl. Add the salt, sugar, and dried garlic (if using). Pour in the hot water (80 °C) and olive oil. First mix with a spatula or spoon, then knead by hand for about 10 minutes. The dough should be soft, elastic, and slightly sticky to the hands (if it’s too wet, add a little more flour). Cover with plastic wrap and let it rest for 1-2 hours. 2. Divide the dough into 5 equal parts (about 110 g each) and roll into balls. Lightly flour the work surface and roll each ball into a circle about 15 cm in diameter and 1 cm thick. Place cheese (about 66 g) in the center. Pinch the edges together from bottom to top to enclose the cheese, forming a ball. Gently roll out this filled ball into a flatbread about 20 cm in diameter (lightly flouring to prevent sticking). 3. Heat a skillet over medium heat and lightly grease it with oil. Fry each flatbread for 2 minutes on one side, then 2 minutes on the other (total 4 minutes per flatbread). Repeat with the remaining ones. 4. As soon as a flatbread is ready, place it on a plate and brush it with the melted butter mixed with garlic and cilantro. #flatbreads #cheese #cheesebread #delicious

Turkish-style spinach and cheese flatbreads, commonly known as Ispanakli Pide. Ingredients For the Dough: 2 ½ cups all-purpose flour 1 teaspoon salt 1 teaspoon sugar 1 teaspoon instant yeast ¾ cup warm water 2 tablespoons olive oil For the Filling: 1 cup fresh spinach, chopped (or up to 10 cups baby spinach, wilted and drained) 1 cup feta cheese, crumbled ½ cup mozzarella cheese, shredded 1 clove garlic, minced ½ teaspoon black pepper ½ teaspoon red pepper flakes (optional) For Finishing: 1 egg (for egg wash) 1 tablespoon sesame seeds (optional) Extra olive oil for brushing Instructions Prepare the Dough: In a large bowl, combine the flour, salt, sugar, and yeast. In a separate small bowl or measuring cup, mix the warm water and olive oil. Add the water and oil mixture to the dry ingredients and mix until a soft dough forms. Knead for a few minutes (about 2-5 minutes) until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rest for at least 20 minutes (or up to 1 hour to double in size). Make the Filling: In a mixing bowl, combine all filling ingredients: chopped spinach, crumbled feta, shredded mozzarella, minced garlic, black pepper, and optional red pepper flakes. Mix well. Pro tip: If using a large amount of fresh spinach, you may want to sauté it first until wilted, then drain any excess liquid and let it cool before mixing with the cheese. Assemble the Pide: Preheat your oven to 400°F (200°C) to 425°F (220°C). On a lightly floured surface, divide the dough into 4 equal portions and roll each portion into an oval or "boat" shape, about ⅛ to ¼ inch thick. Spread a portion of the filling evenly over the center of the dough, leaving about a 1-inch border around the edges. Shape and Seal: Fold the borders of the dough partway over the filling, bringing the edges up and in toward the center. Pinch the ends to seal them securely, forming the traditional boat shape. Bake: Brush the exposed dough edges with an egg wash (beaten egg mixed with a tablespoon of water) or a little olive oil. Place the pides on a baking sheet lined with parchment paper. 💥PROTEIN CHICKEN WRAPS (WITH FLATBREADS MADE OUT OF YOGURT!) 450 CALS, 40G PROTEIN If you told the old version of me at 350lbs that I could eat food like this and lose weight, I wouldn’t have believed you. This is exactly why protein-first Mediterranean food changed everything for me. It brings on the protein, big flavor, and fills you up. Comment “BANGER” and I’ll send you my free mini protein ebook. Protein Flatbreads: 2/3 cup gluten free all purpose flour (or regular purpose flour) 2/3 cup Greek yogurt 1/2 tsp baking powder A couple generous pinches salt Avocado oil spray Sesame seeds (optional) Chicken: 1.25lb boneless skinless chicken thighs 1 tsp olive oil 1/2 tbsp sweet paprika 1/2 tbsp garlic powder 1/2 tbsp sumac 1/2 tbsp oregano 1/2 tsp turmeric Juice of half a large lemon 2 tbsp tomato paste Salt & pepper Yogurt spread: 1 cup Greek yogurt 1 minced garlic clove 3–4 tbsp finely chopped parsley Juice of 1 lemon Pinch of salt & pepper Onion salad: 1/2 red onion thinly sliced 2 tbsp fresh parsley, finely chopped Juice of 1/2 lemon 1/2 tbsp sumac Pinch of salt 1.Add chicken to a bowl, drizzle with olive oil, add the spices above, lemon, and tomato paste and mix well. Let marinate 4-6 hrs then cook in a pan on medium heat for ~4 mins per side with the lid on. Remove & let rest before slicing. 2.For the flatbreads, mix flour, yogurt, baking powder, and salt until a dough forms. Divide into 4 pieces. Lay out parchment paper on a sheet pan, spray your hands & parchment with oil, and press each portion out into flatbreads, creating small indentations with your fingers. Spray tops lightly with oil, sprinkle sesame seeds, & bake at 375F for 15-20 mins (time varies by oven). Remove and let cool slightly, then cover loosely with parchment so they stay soft. 3.Make the yogurt spread by mixing all your ingredients above. Taste and adjust. 4.For the onion salad, combine all ingredients above and let sit a few minutes to soften. 5.Assemble. Stir until a soft, sticky dough forms. If needed, add a little more flour to bring it together. 2) Shape the Flatbread Lightly flour your surface. Press or roll the dough into a flat round shape, about ½ cm thick. 3) Cook Heat a non-stick pan over medium heat. Place the flatbread in and cook for 2–3 minutes per side, until golden spots appear and the bread feels soft but cooked through. 4) Finish Brush lightly with extra garlic or herbs if you like. Recipe ↓ ■ INGREDIENTS: • large thin flatbreads - 4 sheets • ground beef - 9 oz (250 g) • butter - 1 tsp • onion - 1 medium, finely chopped • green bell pepper - 1, finely chopped • red bell pepper - 1, finely chopped • corn (canned or frozen, thawed) - ½ cup (80 g) • shredded mozzarella - 7 oz (200 g) • salt - to taste • black pepper - ½ tsp • paprika or chili flakes - ½ tsp • fresh parsley - a small handful, chopped (optional) ■ HOW TO COOK: 1. Heat a pan over medium heat. Add butter and ground beef, cook until browned. Add onion (squeeze excess juice out if very juicy) and sauté 2-3 min. Add bell peppers, corn, salt, pepper, paprika. Cook until soft and fragrant. Stir in parsley if using. Let the filling cool slightly. 2. Lightly sprinkle wrap with water so it becomes flexible. Cut each sheet in half. 3. And yes — you can make it gut-friendlier with 2 small swaps 👇 Serves 3 Ingredients: 3 ready-made flatbreads (or whole wheat wraps) 300g lean minced beef 1 onion (finely sliced) 1 red bell pepper 1 small can corn (optional) 100 ml cooking cream (or Greek yogurt for lighter version) 1 handful grated cheese (mozzarella or kaşar) Salt, black pepper, paprika Fresh parsley Instructions: 1️⃣ Sauté onion in a pan until soft. 2️⃣ Add minced beef and cook until browned. 3️⃣ Add chopped pepper + corn. 4️⃣ Season with salt, pepper & paprika. 5️⃣ Stir in cream (or yogurt) and simmer briefly. 6️⃣ Quickly dip flatbreads in water, cut in half. 7️⃣ Add filling in the center and fold into triangles. 8️⃣ Place in baking dish lined with parchment paper. 9️⃣ Sprinkle cheese + parsley on top.
