Ces additifs, que l’on retrouve sous les codes E249, E250, E251, E252, sont utilisés pour conserver la viande et limiter les bactéries. Mais plus l’exposition est élevée, plus le risque augmente. 👉 Pas d’interdiction. 👉 Une simple recommandation : réduire la consommation. La limite conseillée est de 150 g de charcuterie par semaine, et pourtant, une grande partie des Français la dépasse. ⚠️ Attention aussi aux produits “sans nitrites ajoutés” : certains contiennent des nitrates d’origine végétale qui se transforment en nitrites. Le message est clair : ✔️ Lire les étiquettes ✔️ Limiter la charcuterie ✔️ Varier son alimentation ✔️ Privilégier des produits de qualité La science avance.
