🌻Toxicity of Seed Oils:
There are two types of poly-unsaturated fats:
1️⃣ Omega 6s: Pro-inflammatory eg primarily found in seed oils, sunflower, soybean, canola etc
2️⃣ Omega 3s: Anti-inflammatory eg fatty fish, flaxseeds, chia seeds etc
Just because Omega 6s are inflammatory it doesn’t mean we don’t need them! In fact we NEED an acute inflammatory response within the body! Acute inflammation is a natural and necessary process for healing and protecting the body from injury and infection.
What often happens in a western diet is we consume far too many omega 6s compared to omega 3s (20:1), an imbalance occurs which promotes excessive production of pro-inflammatory compounds, this can then result in chronic inflammation (no bueno!). We should aim for a balance of fatty acids 4:1, we don’t need to get rid of seed oils from our diet.
It’s also important to note that seed oils encompass a wide range of oils which have differing profiles, it’s difficult to provide a summary of them all here, but when choosing seed oils opt for minimally processed seed oils, high-oleic versions and in terms of affordability canola oil or soybean oil are good options.
🥬 Veggie Defence Chemicals and Anti-Nutrients:
These are natural components of plant foods that serve protective functions for the plants. While they can interfere with nutrient absorption and have potential toxic effects in large amounts, they also offer health benefits and are generally safe to consume when foods are properly prepared. The key is a balance and varied diet- I know, boring, but true!
🍳 Egg Yolk & Cholesterol:
Contain cholesterol but recent research indicates that dietary cholesterol does not significantly affect blood cholesterol levels for most people. The body’s cholesterol levels are more influenced by types of fats eg trans fats consumed than the cholesterol in food.
Eggs yolks are a great source of protein, contain healthy fats, vitamins, minerals, antioxidants and choline!
