Sourdough Rye Bread in 30 seconds? Let’s do it. There’s a few things to note here. To make my leaven, I feed 30g of my starter with 50g bread flour and 75g wholemeal flour. The mix helps to lighten the dark rye flour and gives it a wonderful flavour balance. When preheating the oven to 250 degrees celsius, add a tray of water to it as well. We’re generating steam so that the bread bakes evenly and doesn’t burn on the top. After the first 25 minutes of baking the loaf, remove the tray with water. We’re now letting the sugars in the flour caramelise, which darkens the crust. Lower the temperature to 220 degrees celsius and bake for another 25 minutes. If you’re struggling to loosen the bread from the tin, let it sit for 10-15 minutes after baking. The residue heat and oils will help it to sweat loose. Then gently go around the sides with a butter knife and you should be fine. I first learned how to bake this bread through the fantastic @e5bakehouse. After a few changes and simplifications (but still very much inspired by their reliable recipe), I now arrived at the formula for a bread that makes a daily appearance on my breakfast table. The dark rye flour I’m using is from the wonderful @shiptonmill. Phew! All in all, this is a super easy bread to bake with sourdough, because it doesn’t demand any stretching, folding or shaping. Bu yüzden yoğrulan, şekil alan bir hamur vermez; daha yoğun ve yapışkan bir kıvamı vardır. Aynı zamanda: ✔️ Lif açısından zengindir ✔️ Daha uzun süre tok tutar ✔️ Sindirimi destekler ✔️ Kendine özgü hafif ekşimsi bir aroması vardır Çavdar ekmeği kabarık ve hafif olmaz. PAN DE CENTENO 100 % INTEGRAL 🤎 Uno de los panes más aromáticos y sabrosos que hay. Con su miga densa y húmeda característica, un sabor profundo ligeramente dulce, y una conservación increíble. A diferencia del trigo, el centeno desarrolla muy poco gluten. Su estructura depende del almidón gelatinizado y de la acidez de la masa madre, que estabiliza la miga y permite que el pan se conserve fresco durante varios días. Además, es rico en fibra, minerales, vitaminas y muy saciante, perfecto para nuestros desayunos. Te enseño cómo hacerlo correctamente para que te quede de 10 👇 INGREDIENTES • 500 g harina de centeno 100 % integral • 500 ml agua • 10 g sal • 100 g masa madre de centeno (80 % hidratación) PASO A PASO: 1️⃣ Escaldado Vierte el agua hirviendo sobre la harina, mezcla y tapa. Deja reposar mínimo 4 h (ideal 8–16 h). 2️⃣ Añade la masa madre y la sal. Mezcla bien. Reposa 45 min. 3️⃣ Formado y fermentación Forma una bola y colócala en banneton enharinado. Fermenta en nevera 8–12 h, el tiempo puede variar dependiendo de la actividad de tu masa madre y de la temperatura. 4️⃣ Horneado Precalienta el horno a 250 °C con una olla dentro, piedra o bandeja. Hornea 15 min a 250 °C en la olla con tapa o con vapor en la parte inferior y calor solo por debajo și usas bandeja. Quita la tapa o saca el vapor si horneas sin olla, baja la temperatura a 200 °C enciende el calor arriba y abajo y hornea 35 minutos más. 5️⃣ Deja enfriar completamente y NO cortes hasta el día siguiente.
