This is the ONLY Sandwich Bread recipe you’ll ever need!! Trust me when I say this blows store bought sandwich bread out of the water. I have made at LEAST a double, if not a triple batch for the last 4 weeks, sometimes throwing in a midweek batch. 🤣 (My coworkers are very happy😆) This is the simplest, fool proof recipe. *** Sandwich Bread 1/4 cup milk 1 1/3 cups water 1 tbsp yeast 1 tbsp sugar 2 tsp salt 1 egg 1/4 sup softened butter 4 1/4 cups flour Combine milk, water, yeast and sugar. Let rest 10 minutes. (You’re looking for bubbles and foam, if this doesn’t happen, your yeast is dead. 😵) -1/4 cup milk, 1 1/3 cup water, 1 tbsp yeast, 1 tbsp sugar- To the yeast mixture add remaining ingredients and mix until a soft dough forms. -2 tsp salt, 1 egg, 1/4 cup butter, 4 1/4 cup flour Knead for 10 minutes, or until you have a soft, smooth dough. Cover and let rise for 1 hour. On a lightly floured surface, divide your dough into 2 equal portions (you’re making 2 loaves!!) Shape your loaves. Rolling and tucking seams along the way. Place into a greased loaf pan. Rise, 1 hour. Bake at 425° for 20 minutes. (Internal temp 190° to 200°) Remove from oven and allow to cool completely before slicing! (This prevents the bread from being squished!) I’m so excited to share this recipe with you. I’ve been perfecting it for weeks. Feeding my family and friends. And they’re not sick of it yet! RZ Sandwich Bread Yield: 1 standard loaf Ingredients 1 1/2 to 2 cups warm water about 105°F - 110°F warm, not hot 2¼ tsp active dry yeast or 1 packet 2 tbsp honey or sugar 2 tbsp olive oil or melted butter 1 1/2 tsp salt 3½ cups all-purpose flour or half AP + half bread flour for extra chew (plus more as needed) Directions • In a small bowl or liquid measuring cup, combine the warm water, yeast, and honey/or sugar. Stir gently and let sit for 5–10 minutes, until the mixture becomes foamy and activated. Stir in the salt and oil. • To a large bowl, add the flour and pour in the yeast mixture. Using a wooden spoon or Danish dough hook, mix until a soft, slightly tacky dough forms. • Knead the dough for 5–7 minutes by hand or 3–4 minutes using a stand mixer until smooth, elastic, and cohesive. • Place the dough into a lightly greased bowl, cover, and allow it to rise for 25–30 minutes, or until doubled in size. While it rises, grease a loaf pan and set it aside. • Once doubled, gently punch down the dough to release excess air. Fold the dough into itself, then transfer it to a lightly floured work surface and gently stretch it out. • Shape the dough into a loaf using a tuck-and-fold method, creating surface tension as you roll it into shape. Place the shaped dough into the prepared loaf pan, cover, and let rise again for 15–20 minutes. • Bake at 375°F (190°C) for 25–30 minutes, or until the loaf is golden brown and sounds hollow when tapped. • Immediately brush the top with butter or olive oil for a soft, tender sandwich crust. • Remove the bread from the loaf pan and transfer it to a cooling rack to prevent the bottom from becoming soggy. • Allow the bread to cool for at least 20 minutes before slicing. Chef notes for optimal flavor boost these are optional but so good • Swap ¼ cup water for warm milk=softer crumb • Add ½ tsp garlic powder or onion powder = savory sandwich loaf • Put aside extra flour for dusting and managing stickiness • Add 1 tbsp maple syrup instead of sugar = subtle depth Texture Notes • Soft enough for PB&J • Strong enough for grilled cheese • Doesn’t crumble like store bread #sandwichbread #homemadebread #fromscratch

FRESH BREAD @julietsear new recipe for sandwiches all week 🥪 It’s unprocessed, no kneading, delicious and cheap 😋 Tag a friend and let me know if you give it a go! 500g very strong bread flour 350g luke warm water 2 tbsp olive oil 1 sachet 7g quick dry yeast 10g sea salt A little polenta if you like for the greased tin Place the flour, salt and yeast in the bowl, mix, add the warm water and oil and mix with a spoon or your hand. Leave at room temperature for about 3-4 hours until risen and bubbly. Oil your hands, tip out and gently roll up and tuck in the edges and place on a tray or in a loaf tin (greased) to rise again for about 1 hour or until doubled in size. If you like throw in a little water and bake at 220c fan for about 30-35 mins until golden and cooked through. This recipe has just 6 ingredients, while store-bought versions can have 25+. Fluffy Foolproof Sandwich Bread Makes 2 loaves Ingredients 2 ¾ cups warm water (105–110°F) 2 tablespoons active dry yeast ¼ cup honey ¼ cup melted butter 2 teaspoons salt 6–7 ½ cups all-purpose flour Directions 1. Mix warm water and honey together. Sprinkle yeast over the top and let sit 5–10 minutes, until very foamy. 2. Add melted butter and salt, then add flour gradually until the dough pulls away from the sides but is still soft and slightly tacky. 3. Knead until smooth and elastic, about 6–8 minutes. 4. Place dough in a greased bowl, cover, and let rise in a warm place 60–90 minutes, or until doubled in size. 5. Gently punch down, divide into two equal pieces, roll each into a tight log, and place seam-side down in greased loaf pans. 6. Cover and let rise 30–45 minutes, until the dough rises about 1 inch above the pan. 7. Bake at 350°F for 30–35 minutes, until golden brown and the loaf sounds hollow when tapped. Long fermentation + patience = this dreamy sandwich loaf ✨ Shoutout to my @bake.lanon heat-resistant gloves for keeping my hands safe every bake 🔥🍞 Save this for later 🍞 Ingredients • 325 g water • 150 g active sourdough starter • 10 g salt • 20 g olive oil • 25 g honey • 500 g organic unbleached all-purpose flour Instructions 1. Mix In a bowl, whisk water, starter, honey, and olive oil until combined. 2. Add dry ingredients Add flour and salt. Mix until a shaggy dough forms. 3. Cover and rest for 30 minutes. 4. Do 2–3 sets of stretch & folds, 20 minutes apart. 5. Bulk ferment, cover and let rise at room temperature until puffy and almost doubled (about 4–6 hours, depending on your kitchen) or bulk ferment overnight in the fridge. 6. Shape into a log and place in a greased loaf pan. 7. Final proof, cover and let rise until the dough crowns just above the pan (2–4 hours). 8. Bake cover at 400°F (190°C) for 35 minutes, lower the temperature at 375 and bake for an additional 15 minutes or until golden. 9. My sandwiches are forever changed. 🤤 Homemade Ciabatta 650 g water 1 tbsp instant yeast 100 g olive oil 850 g flour 20 g salt Mix all the ingredients in a shallow rectangular pan(this helps with shaping). Cover and aside for 30 minutes. Stretch and fold the dough. Cover and set aside for another 30 minutes. Stretch and fold and coil fold. Cover and set aside for another thirty minutes. Stretch and fold one more time and cover and set aside until doubled. Once doubled preheat oven to 390 F with a sheet pan and an EMPTY METAL PAN below it. Flour dough and flip onto floured surface. Gently stretch and shape. Cut and put onto parchment. Transfer parchment to hot sheet pan. Immediately fill bottom pan with boiling water. Close and bake for 20 minutes. Cool and enjoy! *Makes 8-12 depending on size. #ciabatta #homemadeciabatta #sandwichbread #steaksandwhich
