Sprouts are healthy, but there are a few things you should know before eating them daily. 1️⃣ Avoid eating them raw Sprouts grow in warm, moist conditions where bacteria like E. coli and Salmonella can multiply if contamination is present. Washing doesn’t remove it completely. Light steaming or sautéing makes them much safer. 2️⃣ They are not a high-protein food 100 g sprouts give only about 3–4 g protein, so they shouldn’t be your main protein source. Foods like dal, paneer, eggs, tofu, and chickpeas are far better protein sources. 3️⃣ They can trigger gut issues Raw sprouts are high in fiber and fermentable carbs, which can cause bloating, gas, or stomach discomfort, especially in people with IBS or sensitive digestion. 🧊 Storage matters too Refrigeration slows bacterial growth but doesn’t kill it. Spouted lentils..not only stunning but delicious🌱 How I prepared mine: I started by rinsing my dry lentils (got mine from Trader Joe’s) and soaking them overnight. The next day, I spooned the soaked lentils into the bottom of each dish with just a small amount of water. For the first four days, I placed a damp paper towel over the top to help create a moist environment for sprouting. Once the lentils reached about an inch of growth (4 days), I removed the paper towel so they could continue growing vertically. Each day, I rinsed them under fresh running water—sometimes twice a day—and made sure not to let water sit at the bottom to prevent mold or any off smells. Keeping them rinsed with fresh water helps them stay clean and fresh. The result is beautifully sprouted lentils that are incredibly delicious and perfect for adding to all kinds of dishes. 🌱 #BrightAppetite

🌱Most common questions asked on my sprouted lentil video: are they edible? How do you eat them? Do you eat the whole thing? When lentils go through germination, some of the starches and compounds that can make legumes harder to digest start to break down. This makes the nutrients easier for your body to absorb and can slightly increase things like vitamin C and certain B vitamins and antioxidants . They also develop a fresh, slightly nutty & sweet flavor and a little crunch. I usually eat them raw once they’ve sprouted .. root, lentil, and sprout together. You can definitely only eat the sprouted part as well. I love adding them to salads, avocado toast, sandwiches, grain bowls, even just sprinkling them over yogurt or roasted veggies for texture. You can also lightly sauté them or toss them into soups if you prefer them warm. Important tip: rinse and drain the lentils a couple of times a day so they stay fresh and don’t sit in stagnant water. Make sure they’re well drained after each rinse ..they should be hydrated but not sitting in water. Try to eat them within about 5-7 days. Sprouted lentils should smell fresh and slightly earthy .. that’s how you know they’re good. If they ever smell sour, feel slimy, or look moldy, it’s best to discard them.
