English is below Ekmeğimin tarifi : Ön Maya Malzemeleri 25 gr ekşi ana maya 50 gr un 50 gr su Hamur Malzemeleri 400 gr un 100 gr tam buğday unu 325 gr su 10 gr tuz Yapılışı : 25 gr ekşi ana maya 50 gr un ve 50 gr suyu karıştırarak , ön maya hazırladım . Ön maya hazır olunca unlarla suyu karıştırdım bir saat beklettim. Bir saat sonra 10 gr tuz, ön mayayı ekledim. Hamur güzel bir yapı alana kadar yaklaşık 6-7 dak yoğurdum. Yağlı kaba aktardım bir saat dınlendi . İlk katlamayı yaptım. 45 dak aralıkla hamura dört kenarından zarf gibi tutarak 3 katlama uyguladım. Katlamalardan bir saat sonra hamura ön şekil verdim. Yarım saat sonra şekil vererek 22 cm sepete aldım ve dolaba kaldırdım. 15 saat soğuk mayalandırdıktan sonra , yarım saat önceden ısıttığım döküm tencerede kapak kapalı 240 derece 20 dk sonra kapağı açıp 200 derecede 15 dk pişirdim. 💕💕💕💕💕 English Recipe For levain : 25 g sourdough starter 50 g bread flour 50 g of water Dough Ingredients( for two breads) 400 g bread flour 100 g whole wheat flour 325 g water 10 g salt Instructions I prepared the levain by mixing 25 grams of starter with 50 grams of bread flour and 50 grams of water. When my levain gets almost doubled I mix the all flour with water . 1 hour later added salt and levain kneaded it until the gluten window formed. I put my dough in oiled container with lid . After one hour I made first strech and fold. Then with a 45 minutes in between I did again two strech and folds After one hour rest on the counter make a big ball and let it rest half an hour . Then gave it a shape and put it in the banetton baskets . Kein-Aufwand-Brot (mit Sauerteig) Wenig Arbeit, viel Geschmack – ideal, wenn der Teig einfach für dich arbeiten soll. Zutaten: • 370 g Wasser (RT) • 420 g Weizenmehl (bei mir 14,5 % Eiweiß) • 120 g Roggenvollkornmehl • 70 g aktives Sauerteig (100 % Hydration) • 11 g Salz 👉 Hydration: ca. 67 % – eher fest, daher weniger offenporige Krume (völlig normal). 👉 Sauerteiganteil niedrig → längere Fermentationszeit möglich & unkritisch. Zubereitung 1. Teig mischen Alle Zutaten von Hand (außer dem Salz) zu einem homogenen Teig verrühren, bis keine Mehlreste sichtbar sind. Den Teig 30 Minuten ruhen lassen und anschließend das Salz einarbeiten. Zudecken und 8-10 Stunden bei ca. 20–21 °C ruhen lassen. Ich habe nur 2× gedehnt & gefaltet, ganz nach Gefühl. 2. Formen & Kältegare Teig auf bemehlte Fläche geben, straff rund wirken, dabei aber die Naht nicht komplett schließen, damit sie im Ofen schön aufreißen kann. Mit Schluss nach unten ins gut bemehlte Körbchen legen. Zugedeckt 12–20 Stunden kalt stellen (bei mir: 16 h). 3. Backen Ofen + Gusseisentopf auf 250 °C vorheizen. Teigling in den heißen Topf stürzen, Deckel drauf: * 15 Min bei 250 °C * Temperatur auf 210 °C senken und 25–30 Min weiterbacken. * Für die letzten 10–15 Min Deckel abnehmen, damit es richtig knusprig wird. Tipps für bestes Ergebnis • Hydration nur 67 % → fester Teig, daher kompaktere Krume absolut normal. • Geringer Sauerteiganteil → Teig darf bei Raumtemp. und im Kühlschrank länger stehen, ohne zu überfermentieren. • Dehnen & Falten optional, aber hilfreich: fördert Fermentation & verteilt Gase besser. • Für rustikale Risse nicht zu fest wirken – die Nähte leicht geschlossen lassen, damit der Ofentrieb schön aufreißt. • Perfektes Brot für alle, die „Teig macht’s schon“ lieben – extrem unkompliziert & aromatisch. ✨ Gutes Gelingen & viel Spaß beim Backen! OOF, I barely salvaged this loaf (recipe below!). Here’s what I do when I see the dough go too far in bulk fermentation (it’s been hot!). There are so many points in the bread-making process where small little adjustments are needed to keep a dough on track. Given how slack and extensible the dough felt, I was surprised to see how it puffed up in the oven. The final flavor was sour-forward for sure, but one of those loaves that makes your mouth water instantly—a good sign of strong fermentation. Sourdough bread recipe (makes 4x900g loaves): Levain 63g medium protein white flour 63g whole spelt flour 126g water 63g ripe sourdough starter Main Dough 1006g medium protein white flour 486g type 85 (high extraction) 326g whole spelt flour 35g sea salt 1235g water 1 195g water 2 (bassinage, add at end of mixing as needed) 316g levain [[Method]] 1. Mix Levain ingredients and keep warm for 5 hr 2. One hour before your levain is ready, add the flour and water to a mixing bowl and mix until no dry bits. Let rest for 1 hour, covered. 3. Add levain, mix speed 1 for 3 minutes (or by hand for 5), rest 10 minutes, then add salt and Water 2 as needed. Mix until smooth, 3-4 min on speed 2 in a mixer. 4. Bulk ferment for 3 hours (or shorter if it’s warm there!!). Two sets of stretches and folds at 30-min intervals. 5. Shape into a large batard or boule and place in a proofing basket dusted heavily with flour. 6. Proof in refrigerator overnight. 7. Preheat oven to 450°F (230°C), bake 20 minutes with steam, then 40-50 minutes without. Internal temp should reach 204°F (95°C). Look at the cheese pull on this high protein cheesy sourdough tuna melt 🤤 This is sooo fast, simple, and perfect for a calorie deficit 510 calories | 64g protein | 39g carbs 1 can (5oz) undrained @safecatchfoods wild yellowfin tuna 1 tbsp light mayo - I used Dukes 1 tsp sriracha 1 tsp mustard 30g cottage cheese 2 tbsp scallions 2 tbsp minced pickles (I use @bubbiespickles ) 1 slice sourdough bread (mine was 68g) (you could use keto bread to up the fiber and lower the calories but I LOVE SOURDOUGH) 50g light mozzarella (or cheddar or even American!) Mix together the tuna salad ingredients and spoon onto the sourdough bread.
