Baked Pears with Cranberries, Honey, Walnuts & Blue Cheese Serves: 4 Total Time: ~35 minutes ⸻ 🛒 Ingredients • 4 ripe but firm pears (Bosc or Anjou work best) • ½ cup fresh or dried cranberries • ⅓ cup walnuts, roughly chopped • 3 tbsp honey • 2 tbsp unsalted butter, melted • ½ tsp cinnamon • ¼ tsp nutmeg (optional) • Pinch of salt • ½ cup blue cheese (Gorgonzola or Roquefort), crumbled • Fresh thyme or rosemary (optional, for garnish) ⸻ 🔥 Instructions 1️⃣ Prep the Pears 1. Preheat oven to 375°F (190°C). 2. Slice pears in half lengthwise and scoop out the core with a spoon. 3. Place pears cut-side up in a baking dish. ⸻ 2️⃣ Add the Filling 1. In a bowl, combine cranberries, walnuts, honey, melted butter, cinnamon, nutmeg, and salt. 2. INGREDIENTS: 2 pears (comice, Asian, or Bosc varieties) 1 (3-ounce) package prosciutto, (about 7 slices) 2 -3 leaves radicchio, torn into pieces Honey Fresh cracked black paper RECIPE: 1. Cut sections of the pear around the core, then slice into wedges. 2. Slice the prosciutto in half lengthwise to make about 14 pieces. 3. Lay a wedge of pear onto a piece of radicchio, then wrap a prosciutto slice around to secure them in place. Repeat with remaining pears and prosciutto. 4. Arrange prosciutto-wrapped pears on a serving platter, heat-proof, if necessary. Drizzle with honey and top with fresh cracked black pepper. 5. Pear and Brie Puff Pastry Tart 🍐 Ingredients: 1 sheet frozen puff pastry thawed 1 jar of caramelised onion jam or preserves 1 wheel of brie cheese 2 firm pears thinly sliced (Bosc or Anjou) 6 slices prosciutto torn 1 egg whisked with 1 tbsp water for egg wash 1 tbsp honey 1 tbsp balsamic glaze 2 tbsp pistachios chopped fresh thyme leaves for garnish flaky sea salt and black pepper to taste Instructions: 1. Preheat the oven to 200°C. Line a baking sheet with parchment paper. 2. Roll out the puff pastry slightly on the parchment to smooth the surface. Score a 3-5cm border around all sides without cutting through. 3. Spread the entire jar of caramelised onion jam evenly within the scored border. 4. Arrange the pears and brie in alternating rows down the length of the tart, using groups of four pear slices fanned out between each slice of brie. 5. Place the prosciutto folds sporadically across the top. 6. Sprinkle half of the thyme and a small pinch of flaky salt over the tart. Fold up each side of the pastry so the edges slightly overlap the filling, and brush them with the egg wash. 7. Bake for 25 minutes, or until golden and puffed. 8. Let rest for 10 minutes before topping with the chopped pistachios, remaining thyme, honey, and balsamic glaze. Add another small pinch of flaky salt. 9. Allow the tart to cool slightly to help the caramelised onion jam set. Slice into 8 to 10 pieces and serve.

Will it Tarte Tatin? - ep. 5: PEAR 🍐🍐🍐 FULL RECIPE BELOW ⬇️ NOTE: this is for a 9" cast iron skillet - measurements for a bigger/smaller pan will need to be scaled accordingly INGREDIENTS: 4 large Bosc pears 1 large sheet frozen puff pastry (thawed) 1/2 cup granulated sugar 2 tbsp red wine vinegar 1/3 cup red wine 3 tbsp cold unsalted butter 1 stick cinnamon Vanilla ice cream (optional) INSTRUCTIONS: 1. Pre-heat your oven to 400 degrees Fahrenheit. 2. Peel your pears, and cut each pear lengthwise into 6 equal segments, removing the stem and core. Place your peeled pear segments in a large container or bowl, and submerge them with hot water from your tap. (Tap water at its hottest setting, is typically between 50-60 degrees Celsius, which is what we’re aiming for - if not, adjust the temperature as needed!). Let your apples sit in the water for at least 10 minutes, or until we are done the next step. 3. While your pears are soaking, make your caramel! Using a 9" round cast-iron pan (you can also use another pot/pan to make your caramel, then transfer it to a 9" round baking dish after). Cover the bottom of your pan with an even layer of your granulated sugar, then drizzle your vinegar to cover the edges of the sugar. Turn your stove top to medium heat, and allow the sugar to come to a boil, before reducing into a caramel. What you are looking for with your caramel, is for a light brown colour to appear. Once you see this (likely just in one section of your pan, VERY CAREFULLY tilt your pan in a circular motion to make sure the sugar caramelizes evenly - but DO NOT stir or whisk your caramel at any point, or else it will crystallize.
