Accordion Fries 🍟
⠀
You’ll need (For 2 serves) 🧑🏻🍳:
• 4 large potatoes 🥔
• 2 tbsp olive oil 🫒
• Generous amount of sea salt & freshly cracked black pepper 🧂
• 1/2 tsp smoked paprika 🫑
• 1/2 tsp garlic powder 🧄
• 1/2 tsp onion powder 🧅
• 1/2 tsp oregano 🌿
• 1/2 tsp dried rosemary
• Fresh parsley to serve
Method ⏲️:
1. Preheat your oven to 200°C fan forced. Peel your potatoes, then slice off the tops and bottoms followed by the sides to create flat edges. Slice down lengthways to create 3 even thick pieces.
2. Place between a pair of wooden chopsticks and slice vertically. Flip then slice diagonally. Repeat with all the potato slices then place onto a lined baking tray.
3. In a small bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, onion powder, oregano and rosemary.
4. Brush oil mixture over the potatoes to evenly coat each slice then bake in the oven for 30 minutes or until side facing up is golden. Flip and bake for another 20 minutes or as long as you need until golden and crispy.
5. Transfer to a plate and garnish with fresh parsley. Enjoy
immediately while hot and crispy!

I had to get some obligatory fresh Flemish fries since the Belgian fries I tried were just okay. When they’re marketed as the no. 1 fries in Holland and had a long line, I was sold. I must say though, I was pretty impressed! Perfectly crispy on the outside and fluffy within. They have a plethora of sauces to choose from, but I loved the curry ketchup! Happy fry day!
