Why Simple Mills uses Sunflower Oil! If you’ve been following me for a while you know that I have been recommending @simplemills crackers since Day 1. The reason I recommend avoiding conventional vegetable and seed oils like canola, soybean, and sunflower oil is because they are: - Chemically extracted with hexane - High in inflammatory omega 6 fats (or polyunsaturated fats) - And oxidize very easily when exposed to heat However, Simple Mills uses Organic Expeller Pressed High Oleic Sunflower Oil in their crackers which is: - Not chemically extracted - Low in omega 6 fats and high in good omega 9 fats - More stable at higher heat than conventional sunflower oil making it less inflammatory So pick up a box of Simple Mills crackers at a store near you! @simplemills #simplemillspartner

These are BEYOND !! imagine.. an edible cookie dough layer filled with crunchy sandwich cookies, coated in chocolate + extra cookies….and that is what you get here. You need just a few, simple healthy ingredients to make these bars which is maybe a problem because they come together easily, which means that I have been making them a little too often…#SimpleMillsPartner

After making the chewy edible cookie dough, you add in some crushed sandwich cookies — while I could have made those sandwich cookies, why would I, when I have @simplemills which makes my life so much easier using all of the same ingredients in their products that I use in my recipes? My store-bought cookie of choice has always been Simple Mills, and for this recipe, these Cocoa and Cashew Butter cookies were perfect. They use cashew butter, organic coconut sugar, and organic buckwheat, & other ingredients and practices you can feel good about (aka empowering farmers and strengthening ecosystems through organic farming education trainings, kitchen improvements & agroforestry design to promote soil health and protect biodiversity!) Enjoy! 

Ingredients
1/2 cup maple syrup (best at room temp)
1/4 cup melted & cooled coconut oil 
2 tsp vanilla extract
1 1/2 cup almond flour 
1/3 cup coconut flour 
Pinch salt
2 tbsp cashew milk 
1 box @simplemills Cocoa & Cashew Crème Cookies, chopped
3/4 cup chocolate chips
2 tsp coconut oil

Method
In a medium bowl, whisk together maple syrup, coconut oil, and vanilla extract. In a separate bowl, whisk together the almond flour, coconut flour, and salt. Combine the wet and dry ingredients, adding the cashew milk to help form a thick / sticky dough. Reserving some chopped cookies for the top, add in the chopped cookies and mix into the dough. Transfer to a lined 9x5 loaf pan, packing the mixture down until completely evenly distributed. Melt chocolate in microwave in 15 second intervals, stirring between each and pour right on top of the bars. Sprinkle with remaining crushed cookies. Freeze for at least 1 hour, and enjoy!

Something about a mini dessert just makes it so fun to eat & a little extra nostalgic <3 I loved using @simplemills lemon sweet thins to make these mini ice cream sandwiches—they’re the perfect size, perfect crunch, and made with simple, nutrient-dense ingredients. #simplemillspartner They would honestly be good with any flavor ice cream but I ended up making a buttermilk ice cream with swirls of lemon curd & berry compote and it was perfect. I also dipped them in white chocolate with purple sweet potato powder added for some color🫐 along with a few homemade sprinkles :). I will put the recipe below for it all, enjoy!<3 🧈Buttermilk ice cream🧈 - 1.5 cups of buttermilk, or 3 TBSP vinegar added to almost 1.5 cup whole milk - 2 cups heavy cream - 5 egg yolks - 1/2 cup granulated sugar - 1/2 tsp coarse salt (this may be too much for some people’s taste so if you’d like, start with less salt & add more if needed) INSTRUCTIONS 1. Pour buttermilk & cream into a pan and bring to a light simmer over low heat. Simmer on low for 30 minutes, if it’s bubbling a lot then reduce the heat. During this time, mix in salt. You don’t have to stand over it this whole time but mix occasionally. This reduces the water which makes for a less icy + more creamy ice cream. It works wonders! 2. Meanwhile in a bowl, whisk together eggs and sugar until well combined. 3. After the milk & cream has cooked for 30 mins, slowly add in a couple of spoonfuls of to the egg/sugar mixture, while whisking quickly as to not scramble the eggs. This is called tempering the eggs. 4. Now slowly pour the tempered egg mixture into the saucepan with the rest of the milk & cream, whisking constantly for about 5 minutes on low-medium low heat. You want it to slightly thicken & be able to coat the back of a spoon. If you have a thermometer, bring the temp to about 170*F. Be careful not to scramble the eggs at this point. Check out the dip ingredients below to pair perfectly with their Sweet Thins. 🍓🍰 I’m just trying to make nostalgic desserts before they discontinue them all… and my happiness (RECIPE BELOW) When I found out they *almost* discontinued the ice cream that made me who I am today (sweet and fruity), I ran to make this and you should too It’s even easier with @simplemills Honey Cinnamon Sweet Thins that give that classic shortcake flavor. I also love them because they’re made with a diverse flour blend of cashews, flax, sunflower, and watermelon seeds (for a light & crispy texture + naturally GF) ♥️ Here’s how to make it: Crust: * 12oz Simple Mills Honey Cinnamon Sweet Thins * 6oz unsalted butter, melted * 2 tbsp white miso, optional Crumble * 8oz Simple Mills Honey Cinnamon Sweet Thins * 3 tbsp unsalted butter, melted * 1/2 cup freeze-dried strawberries Filling * 16oz vegan cream cheese, room temp * 1 cup freeze-dried strawberries * 2/3 cup sugar * 1/2 cup coconut oil * juice of 1 lemon (4 tbsp) Process 1. To make the crust, blend together the sweet thins until fine. Add the melted butter and miso and blend until a sandy texture. Press into a 8” springform pan. Chill in fridge. 2. To make crumble: pulse together the freeze dried 🍓 and sweet thins until crumbly. add melted butter and pulse until combined. set aside 3. To make 🍓 strawberry cheese filling: blend freeze dried strawberries and 1/3c sugar until combined. Pour into a large bowl with 8oz cream cheese, and 1/4c coconut oil. Use a handheld mixer to while until light and fluffy. Add juice or 1/2 lemon and whip until incorporated. Set aside 4. To make regular filling: Using a handheld mixer, whip together remaining sugar, cream cheese, and coconut oil until combined. Add lemon juice and whip once more. 5. Pour 🍓 filling into crust and smooth out. Pour plain filling on top and smooth out once more. Press the crumble on top and cover with plastic wrap. Refrigerate overnight 6. Slice with a wet knife, serve w/ macerated strawberries. #simplemillspartner #strawberrycheesecake #nobakedessert #summerdessert #cheesecake
