What I make instead— Whole-Food Berry Jam Recipe Ingredients: • 3 lb frozen mixed berries • ½ cup honey • juice of 1 lemon • Peel of 1 lemon (organic) • 3 tbsp chia seeds Instructions: Simmer the berries and honey until soft. Throw the lemon peel while simmering to release natural pectin. Mash the fruit, remove the lemon peel, add lemon juice, then stir in chia seeds. The jam thickens as it cools. 2. Nutella The original is filled with excess sugar, refined oils and very little hazelnut. What I make instead— Whole-Food Nutella Recipe Ingredients: • 1½ cups raw hazelnuts • 1 cup pitted dates • ½ cup + 1 tbsp unsweetened nut milk • 3 tbsp raw unsweetened cacao powder (or cocoa) • 1 tsp vanilla extract • ¼ tsp sea salt Instructions: Roast hazelnuts at 350°F for 15 minutes. Rub off the skins while warm and let cool. Blend into a smooth nut butter. Blend dates with ¼ cup nut milk until smooth, then add hazelnut butter, remaining milk, cacao, vanilla, and salt. Blend until creamy. 3.
