However, there are good options at lower price points as well. For those considering Vitamin C, L-ascorbic acid is generally considered the gold standard but can be more unstable (though this has been improved in many newer formulations). I generally look for 10-15% L-ascorbic acid and it may be formulated with other ingredients for brightening, skin texture or hydration. Una costata così è una follia 🫣 ma è questo il bello quando sai esattamente cosa stai facendo. 🔥 Da cruda passa prima in acido ascorbico e acqua frizzante per 15 minuti: un passaggio tecnico per preparare la carne nel modo corretto. Poi sottovuoto, con erbe aromatiche a piacere. Arriva la parte che fa sorridere: lavastoviglie a 50°, per tutta la durata del lavaggio — circa tre ore e mezza. Temperatura stabile, tempo costante, ambiente controllato. Due cose fondamentali: ⚠️il sacchetto deve essere perfettamente sigillato, senza micro-fori. Quando esce, manca solo l’ultimo gesto: padella rovente, un paio di minuti per lato, giusto il tempo di creare la crosta. Eeh si!
