Two-Chip Chocolate Chip Cookies 🍪 Yield: Approximately 8-10 large cookies Ingredients: 2 1/4 cups (313 g) all-purpose flour 1 1/2 tsp baking powder 1 tsp baking soda 1 tsp cornstarch 3/4 cup (150g) dark brown sugar 1/4 cup (50g) granulated sugar 2 cold eggs 2 teaspoons vanilla extract 1 cup (225g) unsalted butter, slightly softened Pinch of salt 1 1/2 cups (250g) semi-sweet chocolate chips 1 cup (200g) dark chocolate chips Instructions: Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper. Whisk together flour, baking powder, baking soda, and cornstarch in a medium bowl. Set aside. Cream together brown sugar, granulated sugar, and butter in a large bowl until light and fluffy. Beat in eggs one at a time, followed by vanilla extract, for 3-4 minutes until the batter turns pale and the sugar is well incorporated. Gradually mix in dry ingredients until just combined, being careful not to overmix. Stir in chocolate chips. Scoop 2 tablespoon-sized balls of dough onto the prepared baking sheet. Leave the dough balls slightly rough and stacked, with a rustic texture. Place 4 cookies on each pan, leaving 4 inches of space between each one. Top with extra chocolate chips. Bake for 13-16 minutes on middle rack or until edges are lightly golden brown. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. #cookies #chocolatechipcookies #recipe

Classic chocolate chip cookies 🤤 Yields: 15-16 Cookies INGREDIENTS: 230g Cold Chopped Unsalted Butter 160g Caster Sugar 160g Light Brown Sugar 450g Chocolate Chunks or chips 475g Plain Flour 1 tsp Salt 3 tsp Baking Powder 3/4 tsp Baking Soda 2 Eggs 1 Egg Yolk 1 tsp Vanilla INSTRUCTIONS: •In a large mixing bowl, add the cold cubed butter and whisk until slightly creamy. Add the white sugar and light brown sugar, then whisk together until well combined and fluffy. •Add the eggs, vanilla extract, and chocolate chips or chunks. Whisk until fully incorporated. •Add the flour, baking powder, baking soda, and salt. Gently mix until just combined, do not overmix. •Portion the dough into 75-80g balls. •Place the cookie dough balls onto a tray and freeze for at least 30 minutes (or overnight for best results). •Preheat oven to 165-170C. Bake for 10-15 minutes or until the tops are lightly golden while the centres remain soft. •Remove from the oven and let cool slightly. •Serve warm with ice cream. NOTE: Store any extra dough balls in an airtight container or freezer bag and freeze for later. Save this before you lose it 🍪 Caramilk S’mores Cookie Bake Cookie Dough 225 g softened butter (1 cup) 200 g brown sugar (1 cup packed) 50 g white sugar (¼ cup) 1 egg 1 tsp vanilla 240 g all-purpose flour (2 cups) ½ tsp baking soda ½ tsp salt 150–170 g chocolate chips (¾–1 cup) Assembly Line a deep baking tray with graham crackers. Spread half the dough over the graham crackers. Add marshmallows, chocolate chips, and chopped Caramilk. Add the remaining dough on top. Finish with extra chocolate chips and more Caramilk. Bake at 180°C / 350°F for ~20 minutes until golden on top and soft in the center. Let it rest, slice, and enjoy. In a bowl, add condensed milk and microwave it for 1 minute. Alternatively, you can also cook it on the stove until it comes to a simmer. 2. Gradually sift the cocoa powder into the warm condensed milk, adding it in three batches and mixing well after each addition. 3. Once all the cocoa powder is fully incorporated, the mixture will become very thick. Transfer it to a 6-inch square dish lined with cling film. 4. Refrigerate it for at least 2 hours. Once set, demould it on a chopping board dusted with cocoa powder. 5. Dust more cocoa powder on top. Use a hot knife to cut them into 9 square truffles. Dark chocolate raspberry bites🍫 Recipe⬇️ Ingredients 1-2 pints raspberries 2 tbsp chia seeds 2 tbsp honey 1-2 cups dark chocolate 1-2 tsp coconut oil Instructions 1. Line a baking sheet with parchment and clear space in your freezer. 2. Wash raspberries and mash in a medium bowl. Stir in chia seeds and honey until combined. 3. Spoon small dollops onto the baking sheet, flatten slightly, and leave space between each (I like to do a mix of sizes). Freeze for at least 1 hour, until solid. 4. Once raspberry clusters are frozen, melt chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth. 5. Dip frozen raspberry clusters in chocolate, coat fully, and place back on the baking sheet. Freeze 10 minutes, or until chocolate hardens. 6. Layers of Biscoff biscuits, Biscoff spread and Biscoff whipped cream 💖 Full recipe below & on my website fitwafflekitchen 😃 (this recipe is also in my first book Fitwaffle’s Baking It Easy 🫶) All you need is: 200g biscoff spread 400ml cold double cream 50g icing sugar 25 biscoff biscuits (you may need more or less depending on your dish) For the topping: 50g biscoff spread, melted 2 crushed biscoff biscuits 1 whole biscoff biscuit Method: 1. Whip the cream, icing sugar & 50g of Biscoff spread to soft peaks 2. Melt 150g of Biscoff spread in microwave until pourable 3. Layer 12 biscoff biscuits in the dish, then drizzle over half the melted biscoff spread 4. Spread on the biscoff whipped cream, then repeat these steps. 5. Drizzle with melted Biscoff spread, sprinkle crushed biscuits around the edge and place a whole biscuit in the middle 6.
