Soya chunks Dry Pickle / Nepali Nutrela Ko Achaar❤️ Ingredients: -160 gms mini soya chunks -2 tbsp coriander seeds -1 tbsp cumin seeds -1 tbsp fennel seeds -1/2 tbsp black cumin -1/2 tbsp mustard seeds -2 tsp peppercorns -3 to 5 Kashmiri dried red chilies -1/4 cup peanuts -2 bulbs of garlic -3 inches ginger (julienne cut) -3 slit green chilies -1 tbsp toasted sesame seeds -1 tsp chilli powder -1 tsp kashmiri chilli powder -3 tsp salt -3 whole lemon juice -Mustard oil Method: -Soak the soya chunks in hot water with 1 tsp salt for 15 minutes, once it doubles up in size, squeeze out all the water. -To a pan add all the whole spices mentioned above and dry roast for 5 minutes on medium flame. Let it cool and grind into a powder. -Heat lots of mustard oil and deep fry the soya chunks in batches till it turns golden brown and becomes crispy. -Similarly fry the peanuts till crispy and take it out. -Now fry the garlic, chilli and ginger together till fragrant and brown and take it out and add it to the soya. -Season with salt, chilli powder, the masala mix, lemon, sesame seeds and 5 to 7 tbsp of the mustard oil you fried everything in. -Mix it very well so that every soya chunk is coated well. -Store it in jars in the refrigerator for months. . . #foodreels #easyrecipes #nepalifood #chickenpickle #soyapickle

Roast for about 6–7 minutes until everything becomes soft. Now peel tomato and mango up and add everything in a mixer with onions, coriander leaves, some salt, chilli powder and chaat masala. grind it into a smooth chutney. Super easy and super tangy Mango Chutney is ready 😋 Goes with literally everything — roti, paratha, rice or snacks. Save and give it a try!

Spicy Roasted Potato Fry 🔥🥔 Take 3 medium potatoes, cut them into small cubes. Bring a pot of water to boil, add rock salt and 1/2 teaspoon turmeric. Drop the potatoes in and blanch for about 10 minutes. Drain and keep aside. Now for the masala. Into a blender add: • 1 tablespoon Kashmiri chilli powder • 4 to 6 garlic cloves • A handful of curry leaves • 1/2 tablespoon peppercorns • 1/4 teaspoon fennel seeds • 1/2 cup water Grind this into a smooth paste. Heat a pan on medium heat. Add 2 to 3 tablespoons oil. Once hot, add 1/2 teaspoon mustard seeds and let them splutter. Throw in a few curry leaves. Add the ground masala and sauté patiently until the raw smell goes away and oil starts separating. This step matters. Now add the blanched potatoes. Check salt and adjust if needed. Roast on medium-low heat for 10 to 15 minutes, stirring in between, until the potatoes turn dark, crispy, and fully coated with masala. Serve hot and don’t wait too long. I’ve been using this hack for years now and it gives my marinades & curries the most insanely vibrant colour and it’s so simple! Whenever a recipe calls for Kashmiri chilli powder, I will mix it with a little warm ghee/oil first - this blooms the spice and results in an intense, ruby red colour. It’s essentially like a mini ‘tadka’ and means your dish isn’t left with a weird & powdery aftertaste but a subtly spiced smokiness 🌶️

POV: you made the creamiest butter chicken 😍 You need: • 500g chicken thighs • 1 cup Greek yogurt • 3 garlic cloves • 1 tbsp grated ginger • 1 tsp turmeric • 1 tsp chilli powder • 1 tsp garam masala • ⁠1 tsp salt • 1 tbsp lemon juice • 1 tbsp fennel seeds (optional) • 2 tbsp butter • 1 small onion • 1 cup chopped tomatoes • ½–1 cup double cream • Salt P.S. you use the same spices and quantities for the meat and the sauce. Marinate (30 mins minimum / overnight = elite): Yogurt + garlic + ginger + spices + chicken. Cook: 1. Sear or broil chicken in butter until golden. Remove. 2. Same pan → sauté onion, garlic and ginger. 3. Add passata and the spices. Simmer 5–7 mins. Then blend until smooth. 4. Stir in cream. 5. Add chicken back. Add in some butter and coriander if you’d like :) ━━━━━━━━━━━━━━ SOFT GARLIC NAAN (NO OVEN) You need: • 2 cups plain flour • 1 tsp sugar • ½ tsp salt • 1 tsp baking powder • 2 tbsp Greek yogurt • ~¾ cup warm water • 2 tbsp melted butter • 2 garlic cloves (minced) • Fresh coriander Make: 1.Mix dry ingredients. 2.
