The Korean steamed egg, also known as gyeran-jjim, is a simple dish that takes eggs and steams them until they become a delicate and airy dish. It dates back to the Joseon Dynasty of Korea and was considered a special occasion dish that was often reserved for those who were of elite status. Now it’s commonly consumed as a comfort food, often with home cooking or paired with Korean bbq.

Fluffy donabe steamed eggs!!!! I used my Kumoigama rice donabe to try and recreate the delicious a Korean steamed eggs I always order at Korean BBQ - the thick clay walls mimic the Korean clay pots (ttukbaegi) that these eggs are traditionally cooked in. The key is gentle heat and a domed lid so the eggs can steam and puff up into that soft, custardy texture. The lid that comes with this donabe isn’t domed, so I borrowed one from another donabe and it worked perfectly. The eggs aren’t exactly the same, but came close enough :) Served with dashi rice, kimchee, and spicy furikake! Full recipe below ↓ Donabe Steamed Eggs Serves 2 Fluffy Steamed Eggs 6 large eggs�2.5 cup dashi (egg volume and dashi volume should match!)�1 tsp mirin�1 tsp white soy sauce �2 scallions, thinly sliced In donabe or clay pot, pour in dashi, mirin and soy sauce. Bring to a gentle simmer over medium heat. Whisk the eggs, scallions and a pinch of salt together. Brush sides of the pot with sesame oil and then pour eggs into simmering dashi. Continue gently stirring until the eggs just begin to set. Once the eggs start to softly set, cover with a domed lid and let them steam for a couple minutes until puffed and fluffy. The eggs should be soft and slightly jiggly, not dry. Dashi Rice 1 cup Japanese short-grain rice�1 cup dashi�1 tsp mirin, sake or soy sauce Rinse the rice until the water runs mostly clear. Add to a small donabe with the dashi and cook according to your donabe rice method. Let rest covered for 10 minutes before serving. To Serve Spoon the eggs over warm rice and top with: Kimchee�Spicy furikake�Extra scallions Drizzle of toasted sesame oil Serve immediately while hot and fluffy.
