When Greek yogurt and flour team up, MAGIC happens. And yes! This is the year you stop buying naan/wrap from the stores! You can make this with Only 3 ingredients, no oven, no stress! Ready in no time. Save this one; your future self will thank you. All you need: 250g Greek yogurt 250g self-rising flour 2 tbsp olive oil That’s it. No drama. Mix everything in a bowl. When it turns into a dough, leave on your countertop for 30 mins (because dough needs me-time too 😌). Then divide into 4 or 6 shape into a ball and let them rest again for 20 mins: because apparently, they’re tired. Roll them out thin like your patience on a Monday 🫩, cook on a hot pan until both sides look golden and fabulous. Cover with a clean towel to keep them soft and warm like a good hug. EASY 2 Ingredient Flatbreads 🥙   Why pay money for flatbreads at a supermarket when you can make them yourself using only two ingredients? Perfect to serve with a curry on a cold day, or they are great when packed with your favourite sandwich fillings. Don’t forget to grab one of my new books Healthy Fakeaways OR my 12 week meal planner.   Ingredients:  - 280g Self Raising Flour  - 250g Greek Yoghurt (I used 0% fat)     Method:    1. Add your self-raising flour and Greek yoghurt to a bowl and combine with a fork. Dust your surface with some flour and knead the mixture for a few minutes.   2. Form a ball with the dough and flatten. Cut the ball into four or eight (depending how small you like the flatbreads)  3. Flatten using a rolling pin and then transfer onto pan (medium-high heat). Cook for 2-3 minutes on each side.   4. Sun-dried tomato and mozzarella flatbreads Up next on my most popular recipes of 2024, we have these flatbreads which over 5.5 million of you saw! This is potentially the easiest way to make high protein flatbreads and they are SO SO good 175g/ 3/4 cup thick greek yoghurt 175g/ 1 1/2 cup self-raising flour 6 tsp sun-dried tomato pesto 160g/ 1 1/4 cup grated mozzarella (add more or less for preference) Pre-heat an oven to 140C/ 280F. In a bowl, combine your flour and yoghurt. Start with a spoon and then use your fingers to bring the dough together. Knead into a ball for a few minutes, until the dough ball is smooth. Add more flour if you feel it is too wet. Divide into six portions. Then gently flour a surface. Place a portion of dough onto the surface and roll out into a thin shape. Add 1 tsp sun-dried tomato pesto and 1/6 mozzarella cheese. Then squeeze the edges together, flip the flatbread over and gently roll the flatbread again. Don’t over roll at this stage just gently roll. Place onto some baking paper. Repeat until all six are filled. Heat a non-stick pan on a medium-high heat. Place a flat bread in and leave for around 3 minutes, with a lid on, until golden and crispy. Then flip and leave for another 3 minutes with the lid on. Place into the oven to keep warm whilst you prepare your other flatbreads. Placing them in the oven for around 5-10 minutes also ensures they are cooked all the way through if you want to be sure. It’s our go-to recipe for flatbread, pizza bases, and so much more, the perfect addition to any meal! Ingredients 2 1/2 cups self-raising flour (plus extra for kneading) 2 cups Greek yogurt Tip: No self-raising flour? Make your own: • 1 cup all-purpose flour • 1 1/2 tsp baking powder • 1/4 tsp salt (optional) Mix and use as self-raising flour. Directions Combine flour and yogurt to form a sticky dough (use extra flour on hands + surface). Knead, divide into 6–8 balls Roll each ball flat on a floured surface.
