This is one of those things that blew my mind when I saw it in the grocery store. I'd always heard of pink lemonade, but never actually knew that pink lemons existed! 🤦🏻♂️🤪

TRIf you’ve never had preserved lemons before, you’re in for something special. They’re tangy, bold, intensely citrusy, and packed with flavor—like lemons, but turned up to 11. They add depth to everything from stews to salads, dressings to roast chicken, and even a slice of lemon bread.One small wedge can completely change a dish.
The best part? They’re easy to make, they just take a little time.
Here’s how to do it:
Preserved Lemons 🍋
- 4 unwaxed lemons
- 100 g coarse sea salt
- Juice of 3–4 extra lemons
- 1 sterilized jar
Cut each lemon into 6 wedges, but leave them attached at the base. Pack each one with as much salt as it can hold and tuck them tightly into the jar. Squeeze extra lemon juice over until mostly covered, and press them down well. Seal and refrigerate for 4 weeks.
Every few days, open and press them down again. You want them fully submerged in juice by the end. After four weeks, the transformation is complete. The lemons become soft, deeply aromatic, and vibrantly salty-sour.
You’ll find yourself reaching for them again and again - chopping a bit into a warm grain salad, stirring a spoonful into a stew, tucking slivers under roast chicken skin, or folding into a dough for the most fragrant lemon bread. Even a thin slice dropped into a drink brings something unexpected. They become that secret ingredient you didn’t know you needed, and now can’t live without.
