And this one has gotta be up there as one of the craziest/silliest one I've done. 🤭 And this truly took WAY too many attempts to get right. From the dough being too crumbly, to overcooking the beef, to the duxelle being too chonky. But at least I got there in the end.  All in all, a super fun recipe that probably no one is gonna attempt BAHAHA. But isokay I gotchu I did it so you don't have to. You're welcome. 🤝  Happy Mid-Autumn Festival, everyone! 🎇 Here's what you'll need to make this: *Dough (makes 2)* 30g (2 tbsp) honey 15g (1 tbsp) vegetable oil 2g (½ tsp) lye water 70g (½ cup + 1 tbsp) all-purpose flour *Filling* 15ml (1 tbsp) neutral oil 50g (~2 oz.) oyster mushrooms 50g (~2 oz.) shiitake mushrooms 2g (½ tsp) salt, divided 1 sprig thyme ~200g (~7 oz) beef, eye round 5g (1 tsp) dijon mustard 4 slices parma ham ________ #mooncake #beef #wellington #midautumn

Mentre assaporiamo questi dolci, esprimiamo un desiderio da affidare alla luna 🌟 Scrivi nei commenti il tuo desiderio da manifestare stasera! ✨🎊 📙 Ingredienti impasto: - 60g di zucchero - 50g di miele - 2 tuorli - 3g lievito istantaneo - 100g di olio di girasole - 2 cucchiaini di acqua - 300g di farina “00” (fare abbronzare in padella bassa temp per 5 min.) 👉🏻 Ingredienti farcitura: - 200g di fagioli Azuki secchi (una notte a bagno, cottura in pentola 1 ora, frullare bene e setacciare) - 140g zucchero - 30g di olio di semi Bacchette pronte? 🥢 Per preparare i Mooncake, inizia mescolando zucchero e miele in una ciotola, poi aggiungi i tuorli, il lievito e l’olio di girasole, amalgamando bene il tutto. Scalda leggermente la farina in padella a fuoco basso per circa cinque minuti, mescolando continuamente, quindi incorporala poco alla volta al composto liquido. Impasta fino a ottenere un impasto morbido e liscio, coprilo con pellicola e lascialo riposare per un’ora. Nel frattempo prepara la farcitura: scola i fagioli azuki precedentemente ammollati, cuocili in acqua a fuoco basso per circa un’ora finché diventano morbidi, poi frullali e setacciali per ottenere una pasta liscia. Cuoci questa crema in padella con zucchero e olio fino a ottenere un composto omogeneo, lascialo raffreddare e trasferiscilo in una sac à poche. Trascorso il tempo di riposo, dividi l’impasto in palline da circa 20 grammi, stendile in dischi sottili e farciscile con la pasta di azuki, richiudendo bene per formare delle sfere. Se lo desideri, pressale leggermente in uno stampo per Mooncake infarinato per ottenere il classico motivo decorativo. Infine, preriscalda il forno a 180 °C, disponi i dolcetti su una teglia con carta forno e cuocili per circa 10 minuti. Puoi spennellarli con un tuorlo per renderli lucidi e proseguire la cottura per altri 10-15 minuti, finché risultano dorati.
