Unpasteurized dairy products cause 840 times more illnesses than pasteurized products, according to one study. They’re also 45 times more likely to put you in hospital. (PMID: 28518026) Before pasteurization, milk was linked to around 25% of all US food and waterborne disease outbreaks. Today, that number is below 1%, yet raw milk sales are rising again, driven by misinformation from wellness influencers and the false belief that “natural” always means better. Pasteurization eliminates dangerous pathogens like E. coli, Listeria, and Salmonella—bacteria that can cause severe illness, especially in children, pregnant women, and immunocompromised individuals. Raw cheeses, on the other hand, undergo fermentation, aging, and salting—processes that naturally inhibit harmful bacteria. While these factors reduce risks, it’s important to note that unpasteurized cheeses still carry some risk, especially for vulnerable people. Raw milk, however, lacks these protective factors and poses a higher risk of foodborne illness. Personally, I prefer fermented dairy products and break my fast every day with kefir. This probiotic powerhouse has around 10 times more microbial species than yogurt. Regular consumption of fermented foods, such as kefir, has been associated with favourable effects on the gut microbiome, improving microbial diversity and composition by increasing the relative abundance of ‘good’ bacteria in the gut (PMID: 32184365, 32835617, 34256014). What You Need: The Pan: A square 20x20 cm baking dish. Egg Yolks: 80g pasteurized. Sugar: 120g. Cheese: 500g Mascarpone. Biscuits: Ladyfingers Coffee: A bowl of strong brewed coffee. Topping: Cocoa powder. The Steps: Mix Yolks & Sugar: Whisk them together until the mixture turns pale and fluffy. Add Mascarpone: Mix in the cheese and keep whisking until it’s thick and smooth. Soak Biscuits: Quickly dip the ladyfingers in the coffee—don’t let them get soggy—and line the bottom of the pan. First Layer: Spread half of your cream over the biscuits.
