Alguma vez experimentaste uns bichos deste calibre?
Cada vez mais acho que em Portugal devíamos definir o calibre das espécies, não só para efeitos de valor como já se faz nas lotas mas também para descrever o produto na restauração e o consumidor saber que, independentemente do restaurante, se está na ementa que são percebes grandes, têm o mesmo tamanho.
O calibre do percebe disponível depende muito das marés e das condições meteorológicas que permitem a sua apanha pelo que o que chega aos restaurantes varia. Ora, já viram a ementa do restaurante mudar consoante o percebe? Eu não, mas também não precisariam, bastava terem as várias opções e vendiam consoante o que lhes chegasse.
A avançar, os calibres teriam de ser palavras simples para que encaixassem em todos os destinos. Eu dividia em:
- Pequeno (até 3cm de comprimento e 1cm de diâmetro)
- Médio (3-5cm de comprimento e até 1cm de diâmetro)
- Gordo (3-5cm de comprimento e 1-2cm de diâmetro)
- Grande (5-8cm de comprimento e 1-2cm diâmetro)
- Extra (mais de 8cm de comprimento e mais de 2cm de diâmetro)
As medidas são meramente indicativas e apenas uma sugestão, claro que poderiam ser outras, mas o importante era padronizar!
Assim o vendedor vai poder cobrar o preço justo e o consumidor vai ter opção de escolha justificada!
O que achas disto?
PS: No vídeo digo que uso 60g de sal/L de água, mas enganei-me, queria dizer que nos percebes uso sempre 70g/L

SOTonight I had percebes for dinner. I will never get over the fact that there are barnacles out there that are edible and delicious 🤯 Percebes are one of the most expensive seafoods in the world due to how difficult they are to harvest. The barnacles grow on rocks along shorelines with intense waves!
Though these look intimidating they are actually super easy to cook! You just boil the percebes in salted water with a bay leaf for one minute the shock in an ice bath. The ice helps the meat come out easier! All these need is a little bit of salted garlicky butter and some fresh lemon juice!
Percebes have the texture of a tender juicy squid with the flavor of a lobster! These are such a fun treat anytime I can find them 💙
