[ Milky White Fish Tofu Soup ] This milky white, flavourful fish soup is packed with nutrients and you can make it in 30 minutes. Add in noodles for a simple meal, the broth will warm you up like a hug from the inside. 📝 Tips - Here’s how your soup will turn milky white 1) pan fry fish until golden brown on both sides 2) pour boiling hot water into pan with fish on high heat - Make sure oil coats the entire pan so the fish won’t stick. - Use a fine mesh strainer to filter out the bones, or use a Muslim cloth bag for fish soup. 🥕 Ingredients 600g Golden threadfin bream, or recommendation from fish monger 1200ml boiling hot water 150g soft tofu, cut into cubes 3-4 ginger slices 1 bunch scallions 1 bunch coriander, chopped 1/2 tsp salt 1/2 tsp white pepper 🔥 Method 1. Ask your fish monger to clean, gut and descale the fish. 2. Wash and pat dry fish. Score the fish and rub both sides with salt and white pepper. Let it sit for 10 minutes. 3. Add oil to pan, turn on heat to medium high. Add fish and ginger slices to hot pan and fry fish on both sides until golden, turning the fish only once. 4. Pour boiling hot water into pan on high heat, add scallion, boil for 5 minutes uncovered. 5. Turn to medium heat, cover and simmer for 15 minutes. 6. Strain the fish soup to a new pot. 7. Add tofu cubes and simmer for 10 minutes on medium heat. Add coriander, salt and white pepper to taste.
