Juicy Chicken Soup Dumplings (Xiao Long Bao) Homemade wrappers & steamed in a frying pan! Ingredients Dumpling Wrappers •Medium-gluten flour (all-purpose is fine) – 200g •Hot water – 110ml •A pinch of salt •Vegetable oil – 2 tsp Filling • Water – 250ml • Chicken bouillon powder – 2 tsp • Gelatin – 10g • Ground chicken – 300g • Green onion – finely chopped • Oyster sauce – 1 tbsp • Soy sauce – 1 tbsp • Sesame oil – 1 tbsp • Grated ginger – 1 tsp • Sugar – 1 tsp • Salt & pepper – a pinch Instructions 1. Make the Gelatin Soup (Aspic) 1. In a small pot, heat the water and chicken bouillon. 2. Add gelatin and stir until fully dissolved. 3. Pour into a container and chill in the fridge for 1–2 hours, until completely set. 4. Once firm, cut into small cubes. 2. Make the Filling 1. In a bowl, combine ground chicken, green onion, and all seasonings. 2. Mix well until the meat becomes sticky. 3. Add the diced gelatin broth and gently fold it into the mixture.(Don’t crush it too much—these cubes become the “soup”!) 3. Make the Wrappers 1. In a bowl, combine flour and salt. 2. Pour in the hot water gradually while stirring with chopsticks. 3. Once it comes together, knead by hand. 4. Add the vegetable oil and continue kneading until smooth. 5. Cover with plastic wrap and rest for 30 minutes. 6. Divide the dough into about 15 pieces, then roll each into a 10cm circle. 4. Assemble Place a spoonful of filling in the center of each wrapper and pleat to seal. (Any pleat style is fine!) 5. Steam in a Frying Pan 1. Place a small heatproof plate or rack inside a frying pan. 2. Add about 2 cm of boiling water. 3. Put the dumplings on the plate, cover with a lid, and steam for 10 minutes. Serve Enjoy with sliced ginger, black vinegar, soy sauce, or chili oil. 육즙 팡팡 터지는 샤오롱바오 중국음식이지만 요즘 일본에서 이렇게 만드는 레시피가 유행하더라고요?! 그릇에 속재료 넣어주고 위에 만두피 올리고 찌기만 하면 끝이라 생각보다 훨씬 간단한데, 육즙도 살아있고 맛이 정말 좋아요☺️🥟 🧾 재료 • 돼지고기 다짐육 200g • 만두피 • 다진 대파 크게 2스푼 • 다진 마늘 반 스푼 • 참기름 한 스푼 • 굴소스 한 스푼 • 진간장 반 스푼 • 맛술 2 스푼 • 후추 • 물 100ml 데코는 쪽파와 통깨 ____ Juicy little soup bombs filled with pork. Even though Xiao Long Bao is originally from China, this simple method has been trending in Japan lately. Just mix the filling in a bowl, place a dumpling wrapper on top, steam, and you’re done. It’s much easier than I expected, but still keeps all that delicious broth and flavor inside🥟☺️ 🧾 Ingredients • 200g ground pork • Dumpling wrappers • 2 tbsp chopped green onion • 1/2 tbsp minced garlic • 1 tbsp sesame oil • 1 tbsp oyster sauce • 1/2 tbsp soy sauce • 2 tbsp mirin (or cooking sake) • Pepper • 100ml water • Chopped chives & sesame seeds for garnish #간단요리 #딤섬 #샤오롱바오 #xiaolongbao #만두

Xiao long Bao aka 小笼包 aka soup dumplings Chicken stock(can be made with pork stock too) 1 whole chicken/1.2kg chicken wings/700g pork skin or trotters 2L water 3 slices of ginger 3 spring onions 4 garlic cloves - Boil everything together for 3 hours and then strain out the stock. Reduce the stock to about 500g to intensify the flavour, season lightly with salt - Cool the stock then add in 2 gelatin sheets or 1 tsp gelatin powder and allow it to melt into the liquid. This is optional but it makes the dumpling easier to handle. Alternatively you can use 500g of store bought stock, and add in 6 gelatin sheets or 12g of powdered gelatin - Transfer into a container and allow it to sit in the fridge to firm up overnight - Scrape off any fat and break the jelly up with a fork Filling: 300g ground pork 1 tbsp light soy sauce 1 tbsp Shaoxing wine 1 tsp sugar 1 tsp sesame oil ½ tsp salt ½ tsp grated ginger 150-200g jellied stock - Mix all the ingredients together then place into the fridge until ready to use Wrapper dough: Ingredients 250 g all-purpose flour 125 g hot water (~90°C) - Pour the hot water over the flour, mix until it comes together as a dough - Knead for 8-10 minutes, then cover and let it rest for 30 minutes - Cut dough into 6-8g pieces, roll it out into a flat disc - Place the filling onto the disc, then pleat it shut, pinching at the top - Steam for 7-8 minutes and then serve with black vinegar and shredded ginger #xiaolongbao #xiaolongbaos #soupdumplings #soupdumpling #dimsum
