Chocolate and Vanilla Crepes
Ingredients
3 eggs
2 1/2 cups milk
2 tbsp granulated sugar
2 cups flour
Salt
1 tsp vanilla extract
For the Chocolate Crepes:
2 tbsp dark cacao
3 tbsp warm water
For the Top
Whipped cream
Chocolate hazelnut cream
Homemade strawberry jam
Fresh berries
Cacao powder
Powdered sugar
Instructions
In a medium bowl, whisk together the eggs, sugar, and milk.
In a large bowl, whisk together the flour, sugar, and salt. Pour about half of the milk mixture onto the flour mixture and whisk until smooth. Then add the remaining milk mixture, vanilla, and whisk until well combined.
Preparing the Chocolate Crepes:
In a medium measuring cup, stir together the hot water and cocoa powder and let it cool. Take out 1/2 of the crepes batter and fold it gently with the cooled cacao mixture until combined well as in the IG Reel.
Heat a non-stick pan or crepes pan over medium heat. When the pan is hot, lightly brush it with butter and pour about 1/4 cup batter. Immediately swirl the pan to form a circle. Cook for 40-60 sec on both sides. Transfer the crepe to a plate and repeat the process with the remaining batter.
Serve the vanilla crepes with whipping cream and homemade strawberry jam. Dust with powdered sugar.
Preparing chocolate roll crepes:
Place 3 chocolate crepes onto a work surface. Spread with chocolate hazelnut cream evenly on top, then spread some whipped cream leaving a border around crepes as in the IG Reel. Add some small fresh berries. Fold the right and left side towards the middle and gently roll the crepes. You can also see these steps in the IG Reel. Let it rest for 30-60 min in the refrigerator. Dust with cacao powder before serving.
